Apple Pie Cookies

Pie or cookies?

I’m faced with this dilemma a lot in my life, I feel. Cookies and pie are my favorite desserts, hands down. I love pie so much I plan on having a pie bar at my wedding. Plus, cupcakes are so last year. As for cookies, they are easy to make and easy to devour—and I make them a lot.

So when I stumbled upon this recipe, I knew it was a match made in heaven. I no longer have to choose from my most beloved desserts! They’re slammed together in one, beautiful, hand-held pie-cookie. Picookie? Coopie? Whatever you want to call it, it’s delicious.

I used a makeshift cookie cutter (um, a glass) to cut out circle shapes in my premade dough. Just remember to flour your cutter so the dough doesn’t stick! The thin strips of dough for the top are easy to cut and infallible; they don’t have to be perfectly even and the same shape. Don’t worry about it! Just make some rustic apple pie cookies. Remember: the sooner you make them, the sooner you can eat them all.

Apple Pie Cookies

Cookies turn into miniature caramel apple pies in the simple dessert recipe.

Ingredients

  • 1-2 Granny Smith apples
  • 1 package of refrigerated pie crust (2 pie crusts)
  • Caramel sauce (like ice cream topping caramel sauce)
  • 1 egg
  • 1/4 cup sugar
  • 1/4 tsp. nutmeg
  • Ground cinnamon

Directions

  1. Preheat oven to 350 degrees. Spray a baking sheet with cooking spray. On a floured surface, roll out one of the pie crusts with a rolling pin until it is slightly larger than its original size. Using a circle cookie cutter or the top of a glass cup, cut out a dozen circles in the dough. Set aside.
  2. Meanwhile, peel skin off of the apple. Continue peeling the apple into little white peels for the cookies.
  3. Place round pie crusts onto prepared baking sheet. Spoon a tiny bit of the caramel sauce onto the cookie rounds. Layer a few slices of the apples on top.
  4. Make the top crust: slice the other pie crust into 1/2″ or smaller strips. Using same cookie cutter or glass, cut out circles on the strips so they fit on top of the cookies.
  5. Lay dough strips on top of apple cookies in a lattice pattern. In a small bowl, whisk together egg, sugar and nutmeg. Brush egg mixture on top of the lattice work and then sprinkle with cinnamon.
  6. Bake for 20-25 minutes or until cookies are golden brown. Let cool for 5 minutes before serving.

Step-By-Step Instructions

On a floured surface, roll out one of the pie crust doughs with  a rolling pin. Using a circle cookie cutter or a glass, cut out twelve circles in the dough. Preheat oven to 350 degrees and coat a baking sheet with cooking spray.

Peel the skin off of the apple and then continue peeling the apple into white peels or chunks. Set aside.

Whisk together the egg, sugar, and nutmeg. Set aside.

Build your cookies! Place the dough rounds on prepared baking sheet. Spoon a little bit of caramel sauce onto each round.

Add apple slices on top of the caramel. Roll out other pie crust and cut into 1/2″ strips. Using the same cookie cutter or glass, cut strips into a circle so that they fit on top of the cookies. Lay strips in a lattice pattern on top of the apple.

Brush egg mixture on top of the cookies and then sprinkle with cinnamon. Bake for 20-25 minutes or until cookies are golden brown. Let cool for 5 minutes and then serve!

These cookies were gobbled up quickly, and not just by me. They were a hit with Rob! The caramel crystallizes around the edges and adds that extra crispy, sweet taste to the cookies. Delicious!
