Caramel Apple Pie Bites

How is your post-Halloween candy binge going?

I’ve been pretty good, but did devour a bit of candy and sweets for my work’s Halloween party. We tend to lean heavily on the sugary side when we throw a work party. There’s nothing wrong with that; just sometimes it’s nice to have more savory than sweet!

I ate a ton of corn dip our traffic anchor made. Corn dip always makes my heart sing! I made some pumpkin-shaped deviled eggs and ate about a dozen of those, too. Other than that, it was all about the sweets!

For the holidays I’m planning in taking a mini-break from Keto so I can indulge in all of my favorite things. Halloween was included in my break-from-keto plan. I made these apple pie bites with crescent dough to take to work—and I couldn’t give them away without trying one (or two, or three). I’ve always been a sucker for apple-flavored anything, so this time of year is perfect for me.

The caramel portion of these apple-turnover-type bites kind of melted out while baking, but still tasted delicious. Brown sugar, cinnamon, apples and caramel are four incredible flavors that always need to be paired no matter what. Despite them oozing caramel sauce, these little morsels still had all of that flavor I was looking for.

Make sure you use Granny Smith apples when making these. Granny Smith are less sweet, so they take to the brown sugar and caramel mixture well. Plus, I’ve always used Granny Smith apples for pies, turnovers, cookies—anything that’s super sweet. You get that tart bite than compliments the sugary sweetness.

You can easily make these without the caramel sauce, if you wish, but I believe they’re better with it! You get the fall & state fair flavors all mixed together. Is there anything better than a sweet caramel apple? I think not.

Caramel Apple Pie Bites

Crispy dough filled with cinnamon-sugar & caramel apples and baked until golden brown.

Ingredients

  • 2 Granny Smith apples, peeled, cored and sliced
  • 1 (8 oz.) cans Pillsbury crescent rolls
  • 1/2 cup brown sugar
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. allspice
  • 3 TBS. butter, melted
  • 1/4 cup prepared caramel sauce

Directions

  1. Preheat oven to 375 degrees. Grease two baking sheets (or line with parchment paper). In a large bowl, toss apple slices with melted butter.
  2. Meanwhile, in another bowl, stir together brown sugar, cinnamon, nutmeg and allspice.
  3. Roll out each crescent roll on prepared baking sheets. Sprinkle a spoonful of cinnamon-sugar mix on each triangle. Place 1-3 apple slices on top. Drizzle about a teaspoon of caramel on top of apples.
  4. Roll up crescent rolls from large end. Bake for 10-12 minutes or until golden brown. Dust with cinnamon if desired.

Step-By-Step Instructions

Preheat oven to 375 degrees. Grease two baking sheets (or line with parchment paper). In a large bowl, toss apple slices with melted butter. Meanwhile, in another bowl, stir together brown sugar, cinnamon, nutmeg and allspice.

Roll out each crescent roll on prepared baking sheets. Sprinkle a spoonful of cinnamon-sugar mix on each triangle.

Place 1-3 apple slices on top.
