Buffalo Chicken Salad

We’re midway through the week but it already feels like Friday. This week has just drug on, and on, and on…

I’m trying to make a snack for our work Super Bowl party on Friday but messed up the first version, baked the second version, and THEN realized my mistake. One of those weeks, guys. One of those weeks.

My simple dinners continue, though. This one is an absolute breeze to make, and well deserving on a rough Wednesday. If you feel like the weekend will never get here then this salad is for you. It’s also pretty good for the Super Bowl this coming weekend, too. Everybody loves buffalo wings, right?

The most difficult part of this meal is pan-cooking the chicken. Hard stuff there, huh? After that, it’s just cutting the chicken and drenching it in buffalo sauce–then you’re well on your way to making a salad for dinner. I love blue cheese, so I went for the blue cheese dressing PLUS blue cheese crumbles to throw on top of the salad. If you’re less adventurous, go for the ranch dressing. Ranch is typically my wing-dipping-sauce-of-choice, anyway.

Can we talk about wings real quick? I’m obsessed. I eat wings almost once a week. Wing Stop is my all-time favorite place, but Buffalo Wild Wings has this killer garlic parmesan sauce that I basically can’t live without. Give me the option to bathe in the stuff and I will. Both restaurants have a great, thin ranch dressing. Ranch dressing is always better in restaurants.

As for this salad, any type of buffalo sauce will do. I personally like Louisiana’s wing sauce, or the OG Frank’s. Go for your fave and have a blast.

Buffalo Chicken Salad

Buffalo sauce drenched chicken on a bed of spring mix with blue cheese dressing and blue cheese crumbles.

Ingredients

  • 1 lb. chicken breast
  • salt & pepper
  • 1 TBS. olive oil
  • 1- 1 1/2 cups buffalo hot sauce
  • 1 cup blue cheese or ranch dressing
  • 1/2 cup blue cheese crumbles
  • 4-5 cups spring mix salad greens

Directions

  1. Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper and cook in pan until browned on both sides and cooked through, about 4-5 minutes per side. Transfer to a cutting board to let cool.
  2. Once chicken is cooled, cut into thin strips. Place into a bowl and toss with buffalo sauce.
  3. Make the salad: toss spring mix with blue cheese or ranch dressing. Top with chicken and sprinkle blue cheese crumbles over the top.

Step-By-Step Instructions

Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper and cook in pan until browned on both sides and cooked through, about 4-5 minutes per side. Transfer to a cutting board to let cool.

Once chicken is cooled, cut into thin strips. Place into a bowl and toss with buffalo sauce. Make the salad: toss spring mix with blue cheese or ranch dressing. Top with chicken and sprinkle blue cheese crumbles over the top.
