Spicy Turkey Potstickers

Y’all. I’ve got a doozy of a recipe for you today!

I cannot stop eating these low carb potstickers I made. I even BURNED the bottom of the first batch and am still devouring the blackened crispiness in record numbers. They’re that good.

Low carb potstickers were a no-brainer for me. It’s easy to just swap out the dumpling shell for cabbage. It’s basically the same overall texture. The cabbage (boiled slightly beforehand in some salted water) rolls up nicely and holds its shape well.

The stuffing is simple: ground turkey, garlic, red onion, and some spices. The real winner here is the spicy peanut dip. Sriracha and peanut butter were MEANT to be together. I think I’m in love. The dip is spicy, savory and sweet all rolled into one. I’ve already had to make a second batch of it because I keep drenching my potstickers in this luscious sauce.

One thing you need to remember when you’re making the potstickers: keep an eye on the pot while they’re steaming. That’s the reason I burned the first batch: I went off to fold some laundry, came back, and the water was all but gone in the bottom of the pot—and the bottoms of my potstickers were blackened to a crisp.

You want to make sure all of the water doesn’t evaporate. You also want to make sure the water doesn’t COVER the potstickers. I used about 3/4 to 1 cup of water in my pot–and the water line came up to halfway from the top of the potstickers. That was just about perfect for a good steam without them getting soggy and gross.

If you have an actual steamer, feel free to use that.

My mind is now running wild with ideas for other potstickers to make. Pork and lime. Shredded buffalo chicken. Cheeseburger. The possibilities are literally endless. I’m so glad I figured out this keto version–even with my failed first attempt.

Spicy Turkey Potstickers

A low-carb, keto version of a traditional potsticker complete with a spicy peanut sauce.

Ingredients

  • 1 lb. ground turkey or chicken
  • 1 TBS. olive oil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. cayenne
  • 1 tsp. ground ginger
  • 2 cloves garlic, minced
  • 1/2 red onion, minced
  • 1/4 cup cilantro, minced
  • 2 TBS. sesame oil
  • 1 head green cabbage, leaves separated

For the Spicy Peanut Dipping Sauce:

  • 2 TBS. peanut butter
  • 2 TBS. Sriracha
  • 1/2 tsp. ground ginger
  • 1 clove garlic, minced
  • 1 TBS. soy sauce
  • 1 TBS. fresh minced cilantro
  • 1 TBS. rice vinegar
  • 1/2 TBS. olive oil
  • salt
  • Juice of 1 lime

Directions

  1. In a large bowl, mix together turkey, salt, pepper, cayenne, ginger, garlic, onion, cilantro and 1 tablespoon sesame oil. Meanwhile, in a large pot of salted water, boil the cabbage leaves for 4-5 minutes so they’re tender and pliable. Drain and let cool.
  2. Take 1-2 tablespoons of the turkey mixture and place in the middle of a cabbage leaf. Roll up tightly. Continue with remaining cabbage leaves.
  3. Heat olive oil and remaining tablespoon sesame oil in a large pot or deep skillet. Add potstickers and let sear for 3-4 minutes. Pour in 3/4 a cup to 1 cup of water, making sure the water only goes up about halfway up the potstickers. Bring to a simmer and cover with a lid. Let simmer for 15-20 minutes, checking every 5 minutes.
  4. Make the peanut sauce: whisk together all ingredients in a small bowl. Serve with potstickers.
