Broccoli Cheddar Breakfast Bake

After weeks of traipsing through the middle of nowhere…

I’m back here in the big city of OKC.

My summer vacation took me to the great state of Montana…where Rob & I camped and visited my parents. The trip wasn’t all roses and fireworks—but I like to remember it as a week and a half of disconnecting from the real world and exploring nature.

Anyone else feel like they need to take a vacation FROM vacation? I had one day at home to recoup and get ready to go back into the real world. Did it help? Not really. I still felt like a newborn giraffe walking into work on Monday. The flourescent lights burned my retinas. The scanners pierced my eardrums. I wished to be transported back to the middle of a wheat field with 4G internet on my phone.

One day back home before work was just enough time for me to get back into the groove of my normal routine. I raced to the grocery store and meal prepped like a wizard on Sunday. If I was going to go back to work after two weeks off, I was going to stick to my normal routine as much as possible.

First up: a breakfast bake. With a breakfast prepared in a 13×9 inch baking pan, all I would have to do for the whole work week would be to take it out of the fridge and reheat a slice in the microwave. No egg cracking everyday, no dirty pots and pans. Brilliant.

I’m slowly running out of keto breakfast casserole options, so this one came to me in my dreams. It’s exactly like broccoli cheddar casserole—minus the rice and sub in the eggs. Who knew broccoli for breakfast would be a hit?

This breakfast casserole is my escape from the real world AND my escape from vacation. It’s an oasis in a baking dish. That might be a bit of a stretch, but it’s true. It really helped me get back in the groove of things.

Broccoli Cheddar Breakfast Bake

Tender chunks of broccoli and melty cheese in a simple breakfast bake.

Ingredients

  • 1 (14 oz.) bag frozen broccoli cuts, thawed
  • 1 cup shredded cheddar cheese
  • 12 eggs
  • 2 tsp. garlic powder
  • salt & pepper

Directions

  1. Preheat oven to 400 degrees. Spray a 13×9″ baking dish with cooking spray. In a large bowl, whisk together eggs, garlic powder, salt and pepper. Add in cheese and whisk until well mixed.
  2. Stir in broccoli chunks and then pour mixture into prepared baking dish. Bake for 20-25 minutes until eggs are set.

Step-By-Step Instructions

Preheat oven to 400 degrees. Spray a 13×9″ baking dish with cooking spray. In a large bowl, whisk together eggs, garlic powder, salt and pepper. Add in cheese and whisk until well mixed.

Stir in broccoli chunks and then pour mixture into prepared baking dish. Bake for 20-25 minutes until eggs are set.
