Texas Bean Dip

‘Tis the season for endless holiday parties and mass amounts of dips.

By dips, I mean chips and dip of course. You can’t have a party, a shindig, a hootenanny, or a small gathering with out the perennial favorite appetizer.

I like to vary the dips I make and bring. My aunt’s got a superb shrimp dip that usually graces my counter at any given party. I’m a firm believer in having a multitude of salsas, guacs, and quesos. I like the sweet-and-salty combo that goes along with pepper jelly on cream cheese.

This dip was screaming out my name in a recipe book a few weeks ago. I love a good dip, and if there’s one thing I love even more than that, it’s a good bean dip. I used to snack on the Frito-Lay bean dip at my grandma’s house when I was a kid. I’ve also been known to polish off a can of the stuff in one sitting.

This bean dip was right up my alley. I was ready to take a chance by making it for the first time and bringing it to my work’s Christmas party.

I took a chance, and it paid off. Almost the entire 13×9″ pan was gone by the time our work party wrapped up. People seemed to love it! I loved it, too.

I loved it so much I’ll be making it again for my family’s Christmas Eve party (which we’re having the day after Christmas—it’s weird, but it had to be done this year). I hope you’ll make it for your next Christmas party, too.

Texas Bean Dip

A warm, cheesy bean dip perfect for a large crowd.

Ingredients

  • 2 (16 oz.) cans refried beans
  • 1 (8 oz.) package taco seasoning
  • 1 cup sour cream
  • 1 (8 oz.) package of cream cheese
  • 1 (4 oz.) can green chiles, diced
  • 4 cups shredded cheese (Monterey Jack, Mexican blend, or Cheddar)

Directions

  1. Preheat oven to 350 degrees. Meanwhile, in a large bowl, heat cream cheese and sour cream in the microwave for 1 minute or until softened. Stir in beans and green chiles.
  2. Add half of the cheese to bean mixture and stir until well combined. Spray a large 13×9″ baking dish with cooking spray. Pour bean mixture into pan. Top with remaining cheese.
  3. Bake for 25-30 minutes or until cheese is melted and dip is warmed through. Serve with tortilla chips.
