Cajun Alfredo Spaghetti Squash

I like to try different sauces.

I guess you could call me a sauce queen.

I have dozens of different sauces stashed in my pantry, fridge, and secondary cabinet.

I’m a big fan of sauce that Trader Joe’s offers. I’ll try anything at least once. So when I saw a jar of Cajun Alfredo the other day, I knew I had to try it.

Unfortunately, it wasn’t my favorite sauce on Earth. I’ve made my own Cajun alfredo before that was much more delicious. But, this sauce will work in a pinch.

When you need a super quick meal, a pre-made sauce is your guy. It’s the workhorse of the pantry and will make dinner a breeze to put together. Even if the sauce isn’t that good, you can dress it up a million different ways.

That’s exactly what I did with this sauce. I added a slew of bell peppers, onions, chicken and sausage. I also added some more Cajun seasoning, to make it even better.

You gotta do what you gotta do.

Cajun Alfredo Spaghetti Squash

  • Servings: 4-6

A spicy pasta dish with spaghetti squash instead of pasta, chicken, sausage and a mix of peppers.

Ingredients

  • 1 lb. chicken breast, cubed

  • 2 tsp. Cajun seasoning

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1 orange bell pepper, diced

  • 1 yellow onion, diced

  • 1 lb. smoked sausage, sliced

  • 1 (16 oz) jar Cajun alfredo or regular alfredo

  • 1 spaghetti squash

  • 2 TBS. olive oil

  • salt & pepper
  • Directions

    1. Preheat oven to 400 degrees. Slice spaghetti squash in half and drizzle both sides with one tablespoon of olive oil. Season with salt and pepper. Place, cut side down, in a large baking dish or baking sheet. Roast for 30-40 minutes or until tender and squash flakes easily with a fork.
    2. Heat remaining tablespoon of oil in a large skillet. Season chicken with Cajun seasoning and cook until tender and cooked through, about 4-5 minutes on each side. Remove to a plate.
    3. Add more olive oil if necessary to the same pan. Stir in peppers and onion and saute for 5-6 minutes or until tender. Stir in sausage and cook for another 4-5 minutes.
    4. Pour in alfredo sauce and chicken. Let mixture come to a simmer and simmer for another 4-5 minutes.
    5. Flake off spaghetti squash strands with a fork. Pour sauce mixture on top and serve.
