Pumpkin Spice Magic Bars

I’m shocked by the amount of people who have never heard of magic bars before.

When I was doing research on this recipe, I kept seeing comments on other magic bar recipes saying stuff like, “I think an ingredient is missing. Don’t you need flour so it’s not so liquidy?”

Here’s a helpful hint for new cooks out there: if something has the word “magic” or “impossible” in the title, you just have to go with it. For some reason, it will all come together in the end.

You just have to have a little bit of faith.

Magic bars are, by design, meant to be gooey morsels of deliciousness. It’s not a baked “bar” like you’re used to— it’s more like a candy bar. The sweetened condensed milk bakes into the graham cracker crust and somehow it just works.

This magic bar recipe is sweetness overload. This is not a recipe for people who like muted desserts. If you want to bounce off the walls for 30 minutes, this is the one for you.

I like the new “morsels n’ more” chocolate chip mixes from Nestle. I used the pumpkin spice flavor for this kind and it was wonderful. The mocha coffee crisps were probably my favorite part. If you can’t find the morsels n’ more, I recommend using regular pumpkin spice flavored chips. If all else fails– just use chocolate chips!

Pumpkin Spice Magic Bars

A sweet, chewy bar made of graham crackers, coconut, chocolate chips, and pumpkin spice morsels.

Ingredients

  • 1.5 cups graham cracker crumbs

  • 1/2 cup butter

  • 1 (14 oz) can sweetened condensed milk

  • 1/3 cup pumpkin puree

  • 1 tsp. pumpkin pie spice

  • 1 cup flaked sweetened coconut

  • 1 cup chocolate chips

  • 1 cup pumpkin spice morsels
  • Directions

    1. Preheat oven to 350 degrees. Line a 9×13″ baking dish with foil.
    2. Melt butter in a small bowl. Stir in graham cracker crumbs. Press graham cracker crumb mixture into the bottom of a pan.
    3. In a medium bowl, stir together sweetened condensed milk and pumpkin puree and pumpkin pie spice.
    4. Pour pumpkin mixture on top of graham cracker crumbs.
    5. Sprinkle coconut, chocolate chips and pumpkin spice morsels on top.
    6. Bake for 25 minutes or until top is golden brown. Cool before slicing into bars.
