Pumpkin Spice Chex Mix

Halloween is still three days away, but the city Rob & I live in had their citywide Trick or Treating yesterday. Ghosts and goblins and princesses came to our door while we were carving pumpkins and celebrating this spooky time of year.

We also went to go see the new Halloween movie yesterday. I was neither thrilled nor chilled, but it was a good movie—all things considered. Slasher flicks just don’t tingle my spine like ghost or demon movies. The Conjuring movies—now those freak me out. Spook city.

Now, we’re changing out batteries in lit garland and hanging up Christmas decor. Am I crazy? Maybe. But Christmas is my most favorite time of year, and I want to be in the holiday spirit for as long as possible. For the last several years I’ve had all my Christmas stuff up by November 1st, on the dot! I know I’m not the only one. Shout out to my Christmas-spirit-sister in Kansas City, Kisha. She always posts a video at midnight on November 1st lighting up all of her gorgeous Christmas stuff.

I’ve still got fall and Thanksgiving-themed foods coming your way. We’re having our station-wide Halloween party on Halloween, and I’ve got a few things up my sleeve. I’m also entering a chili in our chili cook-off, so fingers crossed I win! It’s a delightful new recipe I’m trying mixing a whole bunch of things together.

I made this Halloween/fall-inspired Chex mix last month for a going away party for our beloved traffic anchor, Shelby. The morning show people weren’t as impressed by it, but it was scarfed down by the crew working later in the day. I guess we have different tastes working so early in the morning!

I have to admit, I did take a few nibbles. I’m still on keto, but doing poorly. I ate some leftover candy last night! Don’t tell the keto police.

My favorite part of this Chex mix is using the cinnamon chex and honey nut Cheerios. My grandma has always put Cheerios in Chex mix, savory and sweet. I’ve carried on the tradition because it’s such a good addition to any party mix!

Add whatever fall candies you desired. I went with the candy corn mix with little pumpkins and Reese’s pieces, because who doesn’t love Reese’s pieces??

This recipe is a good one to make for any Halloween parties–and also works for the Thanksgiving holiday! Pumpkin spice is in for now before we transition into my favorite season: PEPPERMINT! Give me all of the peppermint flavored things. Blue Bell also has two different peppermint ice cream flavors coming out, and I’m sure to devour BOTH.

Pumpkin Spice Chex Mix

Sweet and spice Chex mix with pumpkin spice flavors and candy.

Ingredients

  • 2 sticks of butter
  • 2 TBS. pumpkin pie spice
  • 1 tsp. vanilla extract
  • 1/4 cup brown sugar
  • 4 cups Cinnamon Chex
  • 4 cups Honey Nut Cheerios
  • 2 cups mini pretzels
  • 2 cups Reese’s pieces
  • 2 cups Autumn mix candy corn

Directions

  1. Preheat oven to 250 degrees. In a small saucepan, melt butter over medium heat. Stir in pumpkin pie spice, vanilla extract and brown sugar. Heat to a simmer, stirring constantly. Remove from heat.
  2. Pour Chex, Cheerios, and pretzels into a large roasting pan or baking sheet. Stir until well combined. Pour pumpkin spice mixture over cereals and toss to coat.
  3. Bake Chex mix for 1 hour, stirring every 15 minutes. Let mixture cool completely before tossing in Reese’s pieces and candy corn.

Step-By-Step Instructions
