Easy Wonton Salad

There’s a dozen different salads out there that I love, and this easy wonton salad is one of them.

I’ve been a big fan of the Bibigo mini chicken and cilantro wontons for a long time. They take no time at all to prepare (1 minute in the microwave) and you can eat a whole bunch of them while still staying under your calorie count for the day.

I usually eat them by themselves, but I’ve also used them in soups, stir frys, and this easy wonton salad.

You need a relatively small ingredient list to make this salad: just cabbage, iceberg, almonds, red pepper, wontons, and your favorite Asian-inspired dressing.

The Mandarin oranges I added to this easy wonton salad are completely optional. I know its a polarizing ingredient, especially in salads, since they are so sweet. I highly recommend their addition, though.

Easy Wonton Salad

A quick salad to whip together that is filling and flavorful.

Ingredients

  • 12 mini wontons, cooked according to package instructions
  • 1/2 red bell pepper, diced
  • 1/2 cup sliced almonds, toasted
  • 1 cup chopped iceberg lettuce
  • 1 cup chopped cabbage
  • 1 cup Mandarin oranges, drained
  • Sesame ginger dressing of choice, for topping
  • Directions

    1. Cook wontons according to package instructions.
    2. Make the salad: in a large bowl, toss iceberg and cabbage together with pepper, almonds and wontons. Top with Mandarin oranges and drizzle on dressing then serve.
