Falafel Pita with Pea & Mint Hummus

I’ve been taking the time to make meatless meals every so often.

I’m a big meat eater. We’re constantly going through chicken, pork and beef.

I’m also a firm believer in switching up your meals. I’ll eat tofu (sparingly, my body doesn’t really like soy), salads for dinner and other meatless options when I just don’t feel like eating something heavy.

One of my favorite meatless meals is falafels. You can’t beat the box Knorr makes. It’s getting harder and harder for me to find it, though. Right now, I can only get falafel mix at one specific Target in the city.

Sure, I could make my own falafel—but what’s the fun in that? The boxed kind is about as good as it gets. I doubt I could make a falafel much better than that.

I found a bag of frozen falafel at Trader Joe’s a few weeks ago and decided to give it a whirl. Guess what? I hated it. It was far too bready and dry and had the consistency of cornbread. If you gave it to me blindfolded I probably would have thought it was cornbread.

That’s what I get for not going for the Knorr falafel mix.

In order to mask the falafel a little bit, I put it into a pita with a super aromatic hummus I whipped up. The “hummus” wasn’t actually hummus at all; instead it was pulverized peas with mint, pepper and salt. It was so surprisngly good. If you have any leftover, dip some pita chips into it and eat it as a snack. It’s whimsically light and flavorful.

In the end, these pitas were pretty darn good. I’m still disappointed in the falafel, but everything else stuffed inside the pita bread kind of made up for it.

Falafel Pita with Pea & Mint Hummus

  • Servings: 4-6

Falafel stuffed pita with alfalfa sprouts, cucumber, onion and a pea & mint hummus for a perfect meatless meal.

Ingredients

  • 10-12 fully cooked falafel
  • 1/4 cup feta cheese crumbles
  • 8 whole wheat pitas
  • Sliced red onion, sliced cucumbers and alfalfa sprouts, for serving

For the Pea & Mint Hummus:

  • 2 cups frozen green peas, thawed
  • 2 cloves garlic
  • 1/2 cup mint leaves (fresh)
  • 1 1/2 tsp. olive oil
  • 1 tsp. water
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Make the pea & mint hummus: Place all hummus ingredients in a blender of food processer and blend until smooth. Refrigerate until ready to serve.
  2. Make the pita: Spread 2 TBS. pea & mint hummus on the inside of a pita. Stuff 2-3 falafel inside with other ingredients like feta, onion, cucumbers and alfalfa sprouts. Serve.

Step-By-Step Instructions

Make the pea & mint hummus: Place all hummus ingredients in a blender of food processer and blend until smooth. Refrigerate until ready to serve.

Make the pita: Spread 2 TBS. pea & mint hummus on the inside of a pita. Stuff 2-3 falafel inside with other ingredients like feta, onion, cucumbers and alfalfa sprouts. Serve.
