Million Dollar Pie

Ice box pies are the quintessential summer dessert.

Nothing soothes a hot summer day like an ice-cold pie, whether it’s a lemon custard or strawberries and cream pie.

One of my all-time favorites is Million Dollar Pie. I have no idea where the name came from. It definitely does not cost anywhere near a million dollars to make, nor is it a pie I expect millionaires to eat. This pie, however, is worth its high-dollar name.

Million Dollar Pie is incredibly easy to make. You need little to no baking or cooking skills to whip this together. It’s probably the easiest dessert I’ve ever made in my life.

The ingredients are tropical and really hit the spot during the dog days of summer. If you’re looking for a dessert for your Fourth of July gatherings, then this one is for you.

You can mix and match fruits and nuts for this recipe, too. The original recipe only called for mandarin oranges and pineapple, but I like to add shredded sweetened coconut and pecans as well. It is very similar to ambrosia, but in pie form (and a little sweeter, since it contains sweetened condensed milk).

I guarantee that if you take this pie to a family gathering, everyone will love it.

Million Dollar Pie

A sweet, tropical ice box pie containing pineapple, mandarin oranges, coconut and pecans.

Ingredients

  • 1 (14 oz) can sweetened condensed milk
  • Juice of 1 large lemon
  • 1 (10.5 oz) can mandarin oranges, drained and chopped
  • 10 oz. crushed pineapple, drained
  • 1 cup chopped pecans
  • 1.5 cups shredded sweetened coconut
  • 2 (8 oz) containers Cool Whip
  • 2 graham cracker pie crusts
  • Directions

    1. In a large bowl, mix together the sweetened condensed milk and lemon juice. Add mandarin oranges, pineapple, pecans and coconut. Stir until well combined.
    2. Gently fold the Cool Whip into the fruit mixture. Divide the filling between the two pie crusts.
    3. Cover and refrigerate for 2-3 hours or overnight. Pies will keep for up to 8 days.
