Honey Chipotle Beer Barbecue Chicken

If you want a nice barbecue chicken recipe, this Honey Chipotle Beer Barbecue Chicken recipe is for you.

I eat tons of grilled chicken in the summertime and I’m constantly on the search for a good barbecue sauce recipe to go with it.

This one fits the bill. It’s sweet and savory and has this insanely good flavor thanks to the beer and chipotle chili powder. It tastes really good on chicken, but I’d be willing to bet it would taste good on pork and beef too—especially ribs!

Grilling the Chicken

Grilling chicken is tricky business. You don’t want to overcook it and it be dry, but you don’t want to undercook it and get sick.

For this recipe, I highly recommend investing in a meat spike or meat thermometer so you can monitor the temperature inside the chicken closely. ThermoPro let me review their Temp Spike, a Bluetooth-enabled temperature prong that let’s you monitor the temperature of the meat from your phone.

However, If you don’t want to go that route, a regular meat thermometer and consistent temp checks will work just fine.

Additionally, I grill my chicken on about 400 degrees heat (on a propane grill). I’m not the best griller (I typically leave it to my husband) but as long as you have regular checks on the temp and make sure the grill isn’t TOO hot you should be good.

Making the Sauce

The barbecue sauce for this Honey Chipotle Beer Barbecue Chicken is really easy to make.

You can make it all on the stovetop with a few ingredients you probably have in your pantry and fridge.

Although It takes a while to cook, you can leave it alone on a simmer so all those flavors meld together.

Also, Chipotle chili powder is a key ingredient and one I don’t recommend skipping. It’s a little pricey and typically only sold in small containers, but it packs a ton of flavor that makes this barbecue sauce shine.

Honey Chipotle Beer Barbecue Chicken

A sweet and savory barbecued chicken recipe that comes with a honey-chipotle-beer barbecue sauce.

Ingredients

  • 4 large chicken breast, cut in half lengthwise to create 8 pieces
  • 2 tsp. garlic powder, divided
  • Salt and pepper
  • 2 TBS. apple cider vinegar
  • 3/4 cup ketchup
  • 2 TBS. Worcestershire sauce
  • 2 TBS. Dijon mustard
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • 1 TBS. chipotle chili powder
  • 1/2 cup honey
  • 1/2 cup beer
  • Directions

    1. Make the sauce: in a small saucepan, combine ketchup, vinegar, mustard, Worcestershire sauce, 1 teaspoon of garlic powder, onion powder, smoked paprika, chili powder, honey and beer. Bring to a boil then reduce to a simmer. Simmer, uncovered, for about 30 minutes until thickened.
    2. Preheat grill to medium-high heat (400 degrees). Season chicken with remaining teaspoon garlic powder, salt and pepper. Place chicken on the grill (on direct heat) and brush with a light layer of the sauce. Cook for about 4-5 minutes then flip, brushing the other side with a light layer of the sauce. Cook for another 5-6 minutes or until a thermometer placed inside the thickest part of the chicken reach’s 160 degrees. Let chicken rest for 10 minutes after removing from grill to bring temperature up to 165 degrees.
    3. Serve chicken with remaining sauce on the side.
