Betty’s Chicken Salad

Before you ask, no, I don’t know who Betty is.

I’m one of those people who writes down recipes every chance I can get. I’ve been doing it for almost 10 years, and I’ve got recipes coming out of my ears.

Most of the recipes I’ve written down came from my mom, grandma, or Aunt. The rest came out of newspapers, magazines, and cookbooks.

So where “Betty’s Chicken Salad” came from? I have no clue. I could have written the recipe down years ago and now the background information is lost.

This recipe caught my eye because it has everything I love in a chicken salad: the sweet, the crunch, the savory cooked chicken. It also lacks what I loathe: CELERY. I can’t stand celery and HATE when it’s in chicken or tuna salad!

Betty, whoever you are, thank you for the delicious chicken salad.

Betty's Chicken Salad

  • Servings: 6-8

A sweet and savory chicken salad perfect for lettuce cups, wraps, or on bread.

Ingredients

  • 1 lb. chicken breast, cooked and cubed (I airfried mine)
  • 1 cup mayonnaise
  • 1 Granny Smith apple, diced
  • 4 green onions, sliced
  • 1 cup dried cranberries
  • 3/4 cup walnuts, chopped
  • Seasoned salt & pepper
  • Lettuce, tortillas, or bread, for serving
  • Directions

    1. Season cooked chicken with seasoned salt and pepper. Toss into a bowl.
    2. Stir in apples, onions, cranberries, and walnuts. Stir in mayonnaise and stir well until everything is well combined.
    3. Serve on lettuce or in tortilla or bread.
