Apple Cider Donut Bread

There are a few recipes you will not find in my archives, though. I’ve never baked a three-layer cake (it seems way out of my league). I’ve never roasted a full chicken, turkey or goose (that’s way too difficult). I’ve never fried chicken (I’ll leave that to my mom).

I’ve also never made donuts. It just seems like way too much effort.

I’m not a huge donut fan, but I do like them. I especially like apple cider donuts. They are one of my favorites for fall.

Thankfully, I don’t ever have to make apple cider donuts because of this quick bread recipe. This recipe is so easy, anyone can bake it.

It tastes exactly like apple cider donuts, too, especially with the cinnamon sugar topping. The melted butter acts like the fat donuts are fried in to help give the bread a more full flavor.

Apple Cider Donut Bread

Sweet cinnamon sugar quick bread that tastes like an apple cider donut.

Ingredients

  • 2 cups apple cider
  • 3/4 cup butter, divided
  • 1 cup brown sugar
  • 1 large egg
  • 1 TBS. vanilla
  • 2 cups flour
  • 1 TBS. apple pie spice
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cups granulated sugar
  • 1 TBS. cinnamon
  • Directions

    1. Pour apple cider in a saucepan. Bring to a boil and boil for 20-30 minutes or until apple cider is reduced by half (making it 1 cup). Let apple cider cool completely before adding to dough.
    2. In a large bowl, sift together flour, baking powder, baking soda and salt. Set aside.
    3. In another large bowl, cream 1/2 cup butter with brown sugar until well combined and creamy. Add egg, vanilla, apple pie spice and cooled apple cider.
    4. Slowly stir in dry ingredients from the large bowl until everything is well combined. Pour into a greased loaf pan.
    5. Bake at 350 degrees for 50 minutes or until a toothpick inserted into the middle comes out clean. Let loaf cool in dish for 15 minutes.
    6. Make the topping: brush 1/4 cup melted butter all over the top of the loaf. Sprinkle with granulated sugar and cinnamon. Slice and serve.
