Meatball Stuffed Garlic Knots

If it seems like I’ve been blogging a bunch recently about snacks, it’s because I have.

For Christmas Eve AND New Year’s Eve, my family munched on an assortment of snacks. The old standbys were there: lil’ smokies, cheese and crackers, plus a variety of dips.

But I like to make at least two items that are different and new when I’m hosting snack night. Sometimes it will be miniature sandwiches or sliders. Sometimes it’s simply marinated cheese.

No snack night is the same in my house.

For NYE this year, I needed a hearty snack. Something that would stick to your ribs. Something my husband would approve of.

I’ve made meatballs in dough a few different ways before, but this recipe by far takes the cake.

These meatball-stuffed garlic knots were AWESOME. Everybody loved them! My husband had about a half dozen, I believe. You know something is good when he keeps going back for more.

This recipe couldn’t be easier. Grab some frozen meatballs, some premade pizza dough, and just a few other ingredients for an absolute banger of a snack.

Meatball Stuffed Garlic Knots

Ingredients

  • 1 (16 oz) bag frozen meatballs (you need 12 meatballs)
  • 1 (16 oz) package of pre-made refrigerated pizza dough
  • 1/2 cup shredded mozzarella, plus more for topping
  • 4 TBS. butter, melted
  • 2 tsp. garlic powder
  • 2 tsp. dried parsley
  • 1/4 cup grated parmesan, plus more for topping
  • 1/2 cups Marinara sauce, plus more for serving
  • Directions

    1. Preheat oven to 400 degrees. Spray a 12-cup muffin tin with cooking spray.
    2. Unroll pizza dough and roll out with a rolling pin into a large rectangle. Using a pizza cutter or knife, cut dough into 12 squares, big enough to fit in muffin tin.
    3. Place dough squares into each muffin tin. Add a meatball to each dough square, plus a sprinkle of mozzarella cheese. Wrap tops of dough into an envelope, complete covering the meatball and cheese.
    4. In a small bowl, stir together melted butter, garlic powder, parsley and Parmesan. Brush tops of dough with garlic butter mixture.
    5. Bake for 18-20 minutes or until knots are golden brown. Top each garlic knot with marinara and shredded mozzarella. Serve with a cup of marinara for dipping.
