It has been a lazy weekend in the Welcher household.
Since we had planned on being snowed in on Saturday, we had nothing in the works to get out of the house. Neither the snow nor the ice came but our plans were unwavering: stay on the couch, in our pajamas, for 24 hours or more.
I did do a bit of cooking on Saturday and Sunday, but nothing like I usually do. Instead, I did a lot of eating. I’ve got treats coming out of my ears right now! Candy, cookies, chex mix—you name it and I probably have it.
The cats were in love with our stay-at-home weekend. Iggy helped me with recipe “research”…

One of the treats I made this weekend were these cinnamon roll cake balls. I love cake balls with a fervor–I’ll eat them anytime they’re laid out in front of me. There’s a woman I work with who makes the BEST oreo cake balls (thanks Ebony!) and I dream about them sometimes when I sleep.
I wanted something different, and these cake balls were just that. No cake mix here. Just some refrigerated cinnamon roll dough and white chocolate. I’ll take it.
It’s like you crushed up a cinnamon roll and enveloped it in sweet white chocolate. Oh wait, it’s not like that. It is just that. Ground up cinnamon rolls + the icing they come with + a smidge of cream cheese to make them moist enough to roll up into balls and pop into your mouth. These things are addicting, and Rob just informed me that he’s almost eaten them all. Maybe I should have started a private stash.
One thing is for sure: after the holidays are over, it’s back to the keto diet and exercise. I’ve been eating like crud lately, all for the sake of Christmas. I can’t miss out on a cup of nog, or a cookie or two, or a handful of cinnamon roll cake balls. It’s all just too good to pass up!
Cinnamon Roll Cake Balls

Cinnamon sugar cake balls wrapped in white chocolate with cinnamon on top.
Ingredients
- 1 roll cinnamon rolls (that make 8)
- 4 oz. cream cheese, softened
- 8 oz. white chocolate baking bars
- Cinnamon, for topping
Directions
- Bake cinnamon rolls according to package instructions, reserving icing for later. Let rolls cool for 30 minutes.
- Once rolls are cooled, put into a food processor and pulse until fine crumbs are formed. Add icing and softened cream cheese and pulse again.
- Melt white chocolate according to package instructions. Pour cinnamom roll mixture into a bowl and form into 1″ balls (should make around 12-14 balls). Roll each ball in melted white chocolate and place on a parchment paper-lined baking sheet.
- Sprinkle with cinnamon and let sit for 1-2 hours until chocolate is set.
