Blackened Chicken Sandwich

Dishes are piled up in the sink.

Bowls are covered with hardened chocolate. Wrappers and boxes of baker’s chocolate are piled up in the trashcan.

It’s holiday baking season and it’s never been busier in my kitchen I spent the entire weekend melting chocolate and rolling peanut butter balls and tap, tap, tapping sprinkles onto things.

I’m in such a frenzy to get everything done I barely have time to meal prep for the week. My lunch last week ended up being a chicken sandwich every day at work that I whipped together in a frenzy.

It turns out, the chicken sandwich I whipped together was pretty good. Good enough to share, too.

I used the last bit of my blackening seasoning and some Slap Ya Mama on the chicken. Cooking it was nothing special, just a quick pan fry and that’s it. But combined with chipotle mayo, pepper jack cheese, tomato and avocado and this sandwich turned into a masterpiece.

Don’t skimp on the chipotle mayo. It’s easy to mix together and it pairs perfectly with the chicken. Slather that on to your buns for a real treat.

Blackened Chicken Sandwich

A spicy chicken sandwich with creamy chipotle mayo, avocado, tomato, and pepper jack cheese.

Ingredients

  • 4 chicken breast, pounded thin
  • 1 TBS. blackening seasoning
  • 1 tsp. cajun seasoning
  • 2 TBS. olive oil
  • 1/2 cup mayo
  • Juice of 1 lime
  • 1 1/2 tsp. chipotle chili powder
  • 2 tsp. hot sauce
  • 2 avocados, sliced
  • 1 tomato, sliced
  • Salt & pepper
  • 4 slices pepper jack cheese
  • 4 brioche buns, toasted
  • Directions

    1. Season both sides for chicken with blackening seasoning and Cajun seasoning.
    2. Heat oil in a large skillet. Pan fry chicken until browned on both sides and internal temperature is 165 degrees, about 3-4 minutes per side.
    3. Meanwhile, make the chipotle mayo: whisk together mayo, lime juice, chipotle chili powder and hot sauce until well combined.
    4. Spread a few spoonfuls of mayonnaise on a bun. Top with chicken, cheese, a tomato slice, salt, pepper and avocado.
