Mini Apple Pies with Cinnamon Roll Crust

Are you a pumpkin, apple or “other” fall pie type?

I’m an apple pie kind of gal. I love pumpkin pie, too, but if given the choice between the two, I’ll typically pick a slice of apple pie.

I don’t make apple pie very frequently, though, which is unfortunate.

Sometimes baking a pie can be a real hassle.

This mini apple pie recipe is really simple, though.

Instead of rolling out a crust, you roll out some cinnamon rolls. Top with your favorite apple pie filling (or make it homemade, if you’re feeling extra) then sprinkle a streudel mix on top. What could be easier than that?

I love these little pies. They’ve got a great flavor and will leave anyone at your fall party, gathering or Thanksgiving in awe.

Mini Apple Pies with Cinnamon Roll Crust

Goeey apple pies with a flavorful cinnamon roll crust topped with a sweet streudel topping.

Ingredients

  • 2 pkgs. cinnamon roll dough (13 oz. each)
  • 1 large can apple pie filling
  • 2 TBS. butter
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • Whipped cream, for topping (I recommend the maple-vanilla whipped cream at Target)
  • Directions

    1. Preheat oven to 350 degrees. Grease a 12-cup muffin tin (or 12 mini pie tins) with cooking spray.
    2. Flour a surface and rolling pin. Roll out 12 cinnamon rolls thin and flat. Neatly place in mini muffing tins or muffin pan, pinching any seams shut and making a crust.
    3. Cut up large chunks of the apple pie filling into small pieces. Spoon filling into prepared crusts.
    4. In a small bowl, stir together flour and brown sugar. Add butter, cut into small pieces. Either with a knife or hands, mix together butter until sandy with some large pieces resembling a streudel.
    5. Sprinkle streudel topping on top of apple pie filling. Bake for 15-17 minutes or until golden brown. Serve topped with whipped cream.
