I’m about to run out of room in my kitchen with all the cookie-baking I’ve been doing over the last few weeks.
I only have one cookie jar, and four or five Christmas containers. I’ve been taking most of the Christmas cookies to work (which I think my co-workers appreciate), but I still have an over abundance of cookies taking up every last nook and cranny of my home.
Of course, Rob thinks there aren’t enough cookies. I guess he’s probably right. You can never have enough cookies, you know?
I made this cream-cheese-and-cake-mix cookies last weekend along with those absolutely divine brownie cookies. I still can’t decide which I liked better! The cake mix cookies are gooey and sweet, but those brownie cookies—they gave me life for a week.
I did end up burning the bottoms of a batch of these because I left them in the oven too long. But you know what? The burned-bottom ones were still good. Maybe these are my favorite cookies, after all…
My coworkers seemed to enjoy them. They are definitely the easiest-to-make cookies I’ve done so far. Just mix everything together, drop, and serve. Voila! Simple Christmas cookies in a snap.
I thought it was weird that the recipe said to roll the cookies in powdered sugar *before* baking. Most of the powdered sugar ended up baking off in the end. You might was to roll them in powdered sugar after baking when the cookies have cooled down a bit. I think that will make these cookies even better than they already are!
Christmas Cake Mix Cookies

Gooey, buttery Christmas cookies made with sprinkles, cream cheese and cake mix. Melt in your mouth deliciousness!
Ingredients
- 1/2 cup butter, softened
- 1 (8 oz.) package cream cheese, softened
- 1 egg
- 1 tsp. vanilla extract
- 1 box white cake mix
- 1/2 cup Christmas sprinkles
- 1/2 cup powdered sugar
Directions
- Preheat oven to 350 degrees. Cream together butter and cream cheese in a large electric mixer. Add egg and vanilla and continue to beat until well combined. Beat in cake mix until blended. Stir in sprinkles. Refrigerate dough for 1 hour or overnight.
- Line a baking sheet with parchment paper. Scoop out spoonfuls of dough and roll into balls. Roll into powdered sugar and lay out 2″ apart on baking sheet.
- Bake cookies for 8-10 minutes. Cool on baking sheet for a few minutes before transferring to a wire rack to cool completely.
