Greek Yogurt Chicken Salad

Chicken salad is a great lunch to take to work.

It feels like you’re getting more out of your sandwich than if you’re just bringing a regular ol’ turkey and cheese sandwich. Chicken salad is filling and hearty, if you can call a cold salad “hearty”.

There is one problem with chicken salad though: it’s loaded to the brim with calories. If your New Year’s resolution is to get healthier and lose some weight, you should probably steer clear of most chicken salads. The binding agent is a ton of mayonnaise, and we all know mayonnaise isn’t a calorie-light type of condiment (even if you buy the reduced fat versions).

Luckily for you, I did some experimenting and came up with this lightened up version of chicken salad. Instead of a few cups of mayonnaise, it has a few cups of Greek yogurt. If you really start missing the mayonnaise, though, you can always spread a little bit on your bread or wrap. A little bit is better than a lot a bit of mayonnaise mixed in with the chicken salad!

This recipe is loaded with protein, too, if you’re counting macros. Between the yogurt, chicken, and nuts, it’s a protein-rich lunch.

If you want to take it even healthier, serve this chicken salad on lettuce for lettuce wraps or low-carb bread.

Greek Yogurt Chicken Salad

A lightened up chicken salad made with Greek yogurt instead of mayonnaise.

Ingredients

  • 2 large chicken breast, cooked and cubed
  • 2 cups Greek yogurt
  • 2 TBS. white vinegar
  • 2 cups dried cranberries
  • 1/2 cup sunflower seed kernels
  • 1/2 cup pecans, chopped
  • Bread or tortillas, for serving
  • Spring mix, for serving
  • Directions

    1. In a large bowl, mix together cubed chicken with Greek yogurt. Add more Greek yogurt than called for if it doesn’t seem like enough.
    2. Stir in vinegar, cranberries, sunflower seeds and pecans until well combined. Refrigerate until ready to serve.
    3. Serve chicken salad on top of bread, tortillas, or lettuce leaves with spring mix.
