I’m trying to get in this mindset that we’re living in a much warmer season than it actually is.
I’m dreaming of summer, cicadas chirping, beads of sweat rolling down my forehead, and long sunsets.

Instead, what I’m actually living in is barren trees, ice crystals on my windshield, and a churning heater. I’m sick of it.
I’m also not looking forward to a massive winter storm that’s coming in in about 24 hours. I’m plenty prepared, but I don’t want to be.

I’ll just munch on this salad in the meantime and dream of better days. This salad would be PERFECT in the summertime. It’s so refreshing, cool, and crisp.
Hot Honey Chicken Salad

A sweet and spicy chicken salad with cucumbers, corn and cheese.
Ingredients
Directions
- In a small saucpan, combine soy sauce, honey, brown sugar, garlic, and rice vinegar. Heat to a simmer. Make a cornstarch slurry with cornstarch and water. Pour into saucepan and heat, stirring constantly, until thickened. Remove from heat and stir in hot sauce.
- In a large bowl, toss chicken with hot honey sauce. Refrigerate until ready to serve.
- Make the salad: in a large bowl, toss lettuce with ranch dressing, pepper, corn and cucumbers. Top with cheese and chicken.
