I’ve managed to fly under the radar for 2 years now with unexpected respiratory illnesses.
Now, I can no longer claim great health during cold and flu season. It appears as if strep throat has got its stranglehold on me once again.

Luckily, I caught it early. Also, another lucky problem to have: it’s a bacterial infection, so easily treatable with antibiotics. All of that is great— but the throat pain is still excruciating.
I wouldn’t wish strep throat on my worst enemy.
I ate buttered noodles for lunch just to have the warm noodles slide down my swollen and inflamed throat for relief. That’s sad.

Before this infection wrapped its gnarly hand around my throat, I completed some holiday baking. I’m still way behind schedule, but at least now I have some cookies to keep me company.
These cookies are great dipped in coffee or hot cocoa. One key thing to remember: place the mini marshmallows on top of the cookies as soon as they’re out of the oven, and press them down so they stick. You can even use the mini chocolate chips as glue–the hot chocolate melts and acts as a great binder for the marshmallows.

Hot Cocoa Cookies

Chocolate chocolate chip cookies with mini marshmallows, perfect for dunking in hot cocoa or coffee.
Ingredients
Directions
- In a stand mixer, blend butter with sugar until creamy. Slowly add in eggs and vanilla.
- In a large bowl, sift together flour, cocoa powder, baking soda, and salt. Slowly add flour mixture to stand mixer.
- Stir in 1 cup mini chocolate chips.
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Scoop out dough by the heaping tablespoonful and roll into balls. Place on parchment paper. Lightly press down with the bottom of a glass that’s been floured.
- Press a few mini chocolate chips into the tops of each cookie. Bake for 10-12 minutes.
- Press a few mini marshmallows into the top of each cookie while the cookie is still hot. Let cookies cool on baking sheet for a few minutes and then transfer to a wire rack to cool further.
So sorry about your health. I had strep throat once or twice, and it was dreadful and painful. So my heart goes out to you. Hope you are on the road to recovery.
