Honey Buffalo Chicken Strips

Every couple of months or so, a debate rages inside my newsroom.

It’s not a debate about politics, sports or even news for that matter. It’s a debate about who has the best fast food chicken strips.

I’m a steadfast fan of Golden Chick, Chicken Express and Zaxby’s. Half of the newsroom swears by Raising Cane’s, despite my pleas for them to try other restaurants (Raising Cane’s is bland and boring for my taste). Some attest to the delicate flavor of Chick-Fil-A, while others step forward to proclaim their love for Popeye’s.

The debate gets heated, fiery even, and then dies down after a few minutes, only to be rekindled a few months later.

Try as I might, I can’t get my chicken strips to come out as good as some of those fast food chains. I can make a pretty good knockoff in the air fryer, though.

The key to this chicken strip that’s dripping in a sweet-and-spicy honey buffalo sauce is its breading. It’s an abnormal breading but it makes the strips super crispy. Using cereal might seem weird, but cornflakes add just the right amount of crunch to the chicken.

The sauce is great, too. Who knew combining buffalo sauce with honey would taste so good?? I sure didn’t.

Honey Buffalo Chicken Strips

A sweet and spicy extra crispy chicken strip dipped in a honey buffalo sauce.

Ingredients

  • 2 lbs. chicken breast, cut into strips
  • 1 cup all purpose flour
  • 2 tsp. garlic powder
  • 2 tsp. paprika
  • Salt and pepper
  • 2 eggs
  • 1/4 cup hot sauce
  • 4 cups corn flakes, crushed
  • 1 (14 oz) bottle buffalo sauce
  • 1/4 cup honey
  • Directions

    1. Set up a dredging station: in a shallow bowl, stir together flour, paprika, garlic powder, salt and pepper. In another shallow bowl, whisk together eggs and hot sauce. Pour crushed cornflakes on a platter or shallow tray.
    2. One by one, dredge the chicken strips in the flour mixture, then the egg mixture, then cornflakes.
    3. Place coated strips in an air fryer and cook at 375 degrees for 15 minutes.
    4. In a shallow bowl, whisk together buffalo sauce and honey. Using tongs, dip cooked chicken strips in sauce one at a time until well coated. Serve.
