French Onion Chicken & Rice

My French Onion obsession continues with this insanely delicious casserole.

I made French onion potatoes a few weeks ago and they were a massive hit. I’ve made French Onion Chicken & Noodles before and it was also a great recipe.

This chicken & rice recipe, though, may take the cake.

It’s a simple recipe that uses some familiar base ingredients: Campbell’s French Onion soup and Lipton dry onion soup mix.

It’s just like a normal chicken and rice (you know the one with cream of mushroom soup) with just a few ingredients swapped in and out.

If you like your meals REALLY onion-y, feel free to slice up an onion and add it to the casserole. I found there was plenty of onion flavor with the soups and topping.

You absolutely CANNOT skip out on topping this casserole with Gruyere cheese, though. It’s a must. The cheese elevates the casserole to god-tier status when it comes to flavor.

French Onion Chicken & Rice

French onion soup meets a Southern comfort classic casserole.

Ingredients

  • 1 1/2 cups white rice
  • 1 (10.5 oz) can French onion soup
  • 1 1/2 canfuls of water (use the soup can)
  • 1/4 cup butter, sliced
  • 1 lb. boneless, skinless chicken breast, cubed
  • 1 1/2 cups shredded Gruyere cheese
  • 1 (1 oz) packet dry onion soup mix
  • 1 cup French fried onions
  • Directions

    1. Preheat oven to 350 degrees. Pour rice in a 13×9″ baking dish. Stir in soup, water, and chicken. Top with dry onion soup mix.
    2. Add shredded cheese on top of casserole and top with foil. Bake for 1 hour and 15 minutes or until chicken is cooked through and rice is tender. Add French fried onions to top of casserole and return to oven for about 5 more minutes.
