I’m running out of salad recipes.
Since I don’t like to leave my desk for lunch, I typically bring a salad with me for lunch every day. That way I can eat and work at the same time. Salads are just perfect for the work-through-lunch type of people.

I’ve tried just about every salad under the sun. A million different cobb, nicoise, and taco salads. Veggie-heavy and protein-packed salads. You name it, I’ve probably tried it.
I’ve had to start getting more creative in the kitchen. This recipe was born out of that creativity. I used a spicy jerk seasoning for my chicken, added a bunch of tropical and flavorful veggies and fruit, then whipped together a simple spicy dressing.

This is a great salad for people who are on the run. It’s filling, healthy, and extremely flavorful.
A must for this recipe: mango! Make sure you get a ripe (slightly squishy) mango and dice it up into bite-size chunks. Mango is my favorite fruit and it is a great salad ingredient.

Caribbean-Style Chicken & Mango Salad

A spicy, sweet and flavorful salad with jerk chicken, mango, sweet potatoes, peppers and cucumber.
Ingredients
Directions
- Heat 2 tablespoons oil in a large skillet over medium-high heat. Season chicken with jerk seasoning and add to skillet. Cook until browned and cooked through, about 7-8 minutes. Let cool.
- Make the spicy dressing: in a small bowl, whisk together 1/4 cup olive oil with hot sauce, lime juice, salt, pepper and sugar until emulsified. Set aside.
- Make the salad: top chopped Romaine with cucumber, sweet potato, mango, chicken, peppers, and green onions. Drizzle dressing on top and serve.
