I must be on a meatball sub kick.
I made the meatball sub bites the other day for the kickoff of the football season.

Now, I made this casserole for my husband’s lunches throughout the week.
There’s just something about a meatball sub (cue the “nothing like it” TikTok woman here). It really hits the spot when you get a craving for an extremely hearty sandwich.
This casserole could not be easier to make. It’s basically a dump-and-bake casserole, with just a few more minor steps.

This recipe also has a lot of room for adaptation. You can experiment with different cheeses, breads, sauces, etc.
I like to make my sauce a little spicy, so I always add red pepper flakes. You can easily leave them out if you don’t like spicy foods.

Upside Down Meatball Sub Bake

A saucy, cheesy meatball bake topped with garlic toast.
Ingredients
Directions
- Preheat oven to 375 degrees. Spray a 13×9″ baking dish with cooking spray.
- Pour meatballs (frozen) into prepared baking dish. Spread out into one even layer. Pour marinara on top, covering the meatballs. Sprinkle Italian seasoning and red pepper flakes on top, followed by shredded cheese.
- Place frozen Texas Toast on top of cheese, covering most of the dish (I used six toasts on top of mine, they came in a pack of 8). Cover with foil.
- Bake for 40 minutes. Uncover and then return to oven for another 10-15 minutes so toast can get crispy.
