My husband and I have a pretty cherished circulation of dinner recipes.
We can only eat together two days a week (we work opposite shifts) so we have the same ol’ standby recipes.

One of my favorites is one he actually discovered: a one pot Swedish Meatball dinner.
I’ve blogged about that recipe before. It’s a big hit in our household.
I wanted to make something similar but unique and came up with this version: instead of egg noodles, serve the Swedish meatballs with gnocchi!

This meal is incredibly hearty. If you’re hungry before you have dinner, you won’t stay hungry for long.
Make sure you top this with plenty of parmesan, too. That’s the best way to eat it!

Swedish Meatballs and Gnocchi

A simple one-pot meal made with meatballs and gnocchi.
Ingredients
Directions
- Heat oil in a large pot over medium high heat. Add meatballs (frozen) and cook until browned, about 5-6 minutes.
- Stir in Worcestershire sauce, beef broth, milk, pepper, Parmesan, onion powder and salt. Bring to a boil and reduce to a simmer. Simmer, uncovered, for about 10 minutes.
- Stir in gnocchi and let cook for another 15-20 minutes or until gnocchi is soft and sauce is thickened. Serve topped with more Parmesan.
