It’s peak grilling-and-football season, and that means it’s peak Jalapeno Popper season.
The only downside: Jalapeno poppers can be a pain. All that deseeding, scooping, wrapping in bacon and then grilling (and not burning!) them takes a lot of effort.

I’ve got a solution, though. These Jalapeno Popper Bites give you all the flavors of a Jalapeno Popper without all the prep work!
Sure, you still have a lot of mixing and stuffing to do, but I think this recipe cuts the prep work down AT LEAST in half.

Picking your Jalapenos
How spicy you want these Jalapeno Popper Bites is completely up to you.
If you want a spicier bite, choose jalapenos that are smaller and have some wrinkles on them. Those are typically more mature and spicier peppers.

Also, when cutting up your jalapenos, if you want your Jalapeno Popper Bites more spicy, keep in some of the seeds and ribs.
The more seeds and ribs you discard, the less spicy your bites will be.
Stuffing the Jalapeno Popper Bites
This recipe is all about the stuffing.

It starts with softened cream cheese. Make sure you let your cream cheese sit out for a minute on the counter to soften it up. It makes for easier mixing.

I add in two different types of shredded cheese to my stuffing as well: Pepper Jack and Cheddar. Both of the cheeses add extra flavor in the end, and you’ll get an amazing cheese pull in each bite.

Crispy bacon, chopped green onions and diced jalapenos finish the mix.
You need to mix everything together really well to make sure every bite has a little of each ingredient.

I love how these Jalapeno Popper Bites are served inside tortilla chip scoops. It’s the perfect vessel to deliver a Jalapeno Popper stuffing. If you end up with leftovers (you probably won’t, because they’re so good) you can easily reheat them in an air fryer and the snap and crunch will come back to the chip.

Jalapeno Popper Bites

All the flavors of a Jalapeno Popper in bite-size form thanks to the use of tortilla chip scoops.
Ingredients
Directions
- Preheat oven to 350 degrees. In a large bowl, mix together cream cheese, Pepper Jack, cheddar, green onions, jalapenos, and crumbled bacon. Mix until well combined.
- Scoop a spoonful of the cream cheese mixture into each tortilla chip scoop. Place stuffed tortilla chip onto a baking sheet. Continue until no filling remains.
- Bake for 8-10 minutes or until cheese is melty and soft. Serve immediately.
