McGriddle Bites

A lot of people are hosting family for several days, or weeks, over the holidays.

Think: National Lampoon’s Christmas Vacation. I think the Griswold’s family comes to the house on, what, December 16th? That’s a lot of time in close quarters with your family before Christmas.

If you need a quick, easy, and bulk breakfast item while you play host, this is the recipe for you.

This McGriddle Bites recipe makes almost 48 bites and can easily please a crowd. Serve it with some syrup for dipping or drizzling and your family will love you even more than before!

Add Extra Protein

McGriddle Bites have a ton of protein in them, and are a great way to start the day.

Between the sausage and cheese, you’ve got a protein-heavy meal.

If you make one simple swap, you can amp up the protein even more. I used protein pancake mix and it tasted amazing!

I honestly can’t taste the difference between regular pancake mix and protein pancake mix. I’ve tried two different brands (Pearl Milling and Kodiak) and both came out perfect.

Making Your McGriddle Bites

There are a few key things to remember when you make these McGriddle Bites.

First, make sure you own a mini muffin tin! They are much smaller than regular muffin tins and typically contain about 24 holes.

Unlike most muffin recipes, you don’t need to be careful with how full you fill the muffin tin. A lot of muffin recipes say to fill 2/3 of the way full, but you can fill a muffin tin with the McGriddle Bites batter all the way to the top.

I also like to add a little bit of shredded cheese to the tops of these McGriddle Bites before baking. It adds a crispy little cheese coat that can’t be beat.

McGriddle Bites

Sweet and savory breakfast bites made with pancake mix, sausage and cheese.

Ingredients

  • 1 lb. ground breakfast sausage
  • 2 cups pancakge mix
  • 1.5 cups water
  • 1/4 cup maple syrup
  • 1 cup shredded cheddar cheese, divided
  • Directions

    1. In a large skillet over medium high heat, cook sausage, crumbling with a large wooden spoon. Cook for 5-8 minutes or until browned. Drain off grease and let sausage cool.
    2. In a large bowl, whisk together pancake mix with water. Stir in maple syrup, cooled sausage, and 3/4 cup shredded cheddar cheese. Stir until well combined.
    3. Grease a mini muffin tin. Spoon pancake batter into each tin hole, filling up. Sprinkle remaining cheddar cheese on top.
    4. Bake at 400 degrees for 12-15 minutes or until browned. Use a spoon to pop McGriddle Bites out of muffin tin. Serve with syrup. Recipe makes 32-40 McGriddle Bites.
