Breakfast Sausage Balls

My husband, my parents and I went on a week-long camping trip in early June.

We camped all over Montana in 4 different camping spots for 7 nights. My husband and I camped in a tent, but my parents had a small camper so we could use the bathroom and cook with a stove/microwave if we wanted.

The first few nights, however, we were “boondocking” in primitive camping spots that did not have electricity. That meant we couldn’t cook unless it was over an open fire or on my stepdad’s small propane grill.

We ended up using the firepit for most of the cooking for those few nights. It’s something my husband and I have done several times, and it’s always an experience. Sometimes there’s nothing like cooking a meal over an open fire.

My mom came prepared. She pre-cooked our breakfast for those first few mornings so all we had to do was heat it up in some foil on the campfire. She made these sausage balls that are just the most perfect thing to eat to start your day when camping.

These balls are flavorful and packed full of protein. They’re a handheld breakfast, so no plates are necessary. They are also exceptionally easy to heat up in foil over a fire.

I asked my mom where she got the recipe, and she said she got it from my aunt, who is much more outdoorsy than we are. I plan on making these from now on when we go camping!

Breakfast Sausage Balls

A simple handheld breakfast perfect for people on the go.

Ingredients

  • 2 lbs. ground pork sausage
  • 2 eggs
  • 1 (20 oz) bag refrigerated hashbrowns
  • 2 tsp. Cajun seasoning or seasoned salt
  • 1/2 tsp. black pepper
  • 8 oz. shredded colby jack cheese
  • Directions

    1. In a large bowl, combine sausage, eggs, seasoning, pepper, and cheese. Work in hashbrowns until mixture is well combined.
    2. Preheat oven to 350 degrees. Place a sheet of foil on a large baking sheet.
    3. Roll sausage mixture into medium-sized 2-3″ balls. Place in a single layer on baking sheet. Should make around 20-24 balls.
    4. Bake for 25-30 minutes or until lightly browned and sausage is cooked through.
    5. For reheating at a campsite: wrap a bunch of balls in one sheet of foil. Heat over direct flame for about 5-6 minutes.
