Ham & Cheese Muffin Tops

This weekend was one of the best Rob & I have had since before Christmas. We went out, explored the town, and took part in some really fun events.

On Saturday, we decided to take in a flick at the new Banquet Cinema in downtown OKC. Think Alamo Drafthouse, but hyper local. I was sold when I found out they were showing one of my favorite movies, “Moonstruck”. Their pizza, which we ate while watching the movie, was really worth it. I had a buffalo chicken pizza slice and a slice of the “True Grit” which included speck ham and some beer jelly. Sounds weird? It was. But it was oh so good.

Rob went for the pepperoni slice & an Italian sausage and calabrian chili slice. Incredible.

Sundays we usually don’t leave the house, but this Sunday we went to the Friends of the Library book sale at the state fairgrounds. The place was packed full of books, most for under $2. I made off with nearly a dozen new cookbooks, and a few other books…all for around $20. What a steal!

For Sunday brunch we hit up Hunny Bunny Biscuit Co. I had eaten there once right before they opened and fell in love. Instead of the biscuits and mushroom gravy, I opted for the “Southern Gentleman”: ham, pimiento cheese, and green tomato relish. So delicious.

I guess I was just in a ham mood this weekend. Ham pizza, ham biscuits, and now this ham & cheese muffin top recipe. These aren’t really muffin tops, but they looked like that when they came out of the oven so I went with it.

All it is: cheese, eggs, and ham. These are really cheesy and really good. They’re great for an on-the-go breakfast, and they’re edible both cold and warm. I popped a couple for breakfast right out of the fridge this morning!

I’m all for ham and cheese breakfast items. It’s harder now for me to find a good ham that doesn’t have sugar in it, but not impossible. I like the brand that I used in this recipe; it’s hardier and a bit thicker of a cut than other pre-packaged deli hams.

You can obviously use whichever ham you prefer, but you might think about opting for the thicker cut for this recipe…so you can get those big chunks of delicious ham in every bite.

Ham & Cheese Muffin Tops

An easy baked breakfast with eggs, triple cheese and ham.

Ingredients

  • 1 cup diced ham
  • 1/2 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1/2 cup parmesan cheese, shredded
  • 2 eggs

Directions

  1. Preheat oven to 375 degrees. Line a large baking sheet with parchment paper. In a large bowl, stir together cheeses and eggs. Add some salt and pepper and then stir together with the ham.
  2. Scoop out ham and cheese mixture with a 1/4 cup measuring cup and pour into circles on prepared baking sheet (should make between 6-8 muffin tops). Bake for 15-20 minutes or until eggs are set and cheese is melted. Let cool on baking sheet for 10-15 minutes before serving.

Step-By-Step Instructions
