Pimiento Cheese & Ham Breakfast Sandwich

I love how my grocery store branches out to cater to people with different diets.

There’s a gluten-free section and a vegan section. My grocery store constantly stocks the shelves with local and small-business-made items. I can find different types of Asian noodles there with ease.

But my favorite find so far is probably the “zero net carb” bread. I was shocked when I saw it in the bread aisle and had to do a double-take. I didn’t even know something like this existed! Here I am, having to make my own mug bread when I get a craving for a sandwich. This new loaf takes all the effort out of that!

The brand is Thin Slims and they’ve got several different varities of bread on the shelves at my local grocery store. They even make buns! Here’s to endless possibilities thanks to the bread substitute.

The bread is extremely dense, probably because of all the fiber. There’s still wheat in the ingredients list, but it’s got none of the carb-y elements. It really is ZERO net carb bread. It looks like bread (it’s got a crust and all!) and pretty much tastes like bread. I call that a winner in my book.

First thing up for my new zero carb loaf: a breakfast sammie. The second thing I ever taught myself to cook was a breakfast sandwich. There’s nothing better than scrambled eggs, American cheese, and mayonnaise on toast. That was my breakfast everyday for a while when I was in college.

This breakfast sandwich is a little fancier than that. I went with a pimiento cheese riff (a jar of pimientos, a handful of cheddar & a dot of hot sauce) and grilled up some ham steak cubes for a hearty start to the day.

It was perfect.

The faux-bread satisfied my craving and the fillings sent it over the top. I love a good ham and cheese sandwich, and this one was fantastic.

Pimiento Cheese & Ham Breakfast Sandwich

A cheesy breakfast sandwich with eggs and ham, perfect for a simple breakfast.

Ingredients

  • 1 large ham steak, cubed and bone removed
  • 8 large eggs
  • 2 tsp. hot sauce
  • 1 TBS. heavy cream
  • 1 TBS. olive oil
  • 1 small jar pimientos
  • 1 green onion, sliced thin
  • 1 cup shredded sharp cheddar cheese
  • 2 TBS. cream cheese
  • Bread and green onions, for serving

Directions

  1. In a large bowl, whisk together eggs, hot sauce, cream, salt and pepper. Set aside.
  2. Meanwhile, in a large skillet, heat oil over medium-high heat. Add ham and cook until browned, around 4-5 minutes. Add pimientos, green onions, egg mixture and cream cheese. Stir and continue cooking until eggs are almost set, about 3-4 minutes.
  3. Stir in cheese and continue cooking until melted. Remove skillet from heat. Serve egg and ham mixture on toasted bread and top with sliced green onions.
