Hawaiian Sheet Pan Meal

After more than a week of not leaving the house, the walls start to feel like they’re closing in on you.

Don’t get me wrong, I love social distancing. Our apartment is cozy and we’ve got everything we need right here. I’m a homebody and someone who secretly rejoices when plans get canceled.

However, I also love to travel. I love adventures. I love the adventures my husband and I take. This time last year we were traipsing around New Mexico…

And a few years before that, we took a short road trip to Oklahoma’s first capitol city. Guthrie.

As my apartment starts to feel smaller, I also find my mind wandering to our honeymoon cruise. We first roadtripped to NOLA to catch the boat, then spent many days lounging on pristine beaches…

Of course, my favorite part about the trip was the roadtrip to Louisiana. The best parts of our adventures are because we’re together, so it doesn’t really matter where we go…

Even if that means a trip to the couch for a hand of Gin Rummy (which I most assuredly will lose) and a pizza we made ourselves.

I’ll take this time to travel to different places in my kitchen. Feeling exotic? Let’s make some Latin American cuisine. Got a taste of the tropics on your mind? Why not a pineapple for dinner?

My yearning for an adventure lent itself to this meal. I needed an adventure and this is what I got! Bonus points for the Vitamin C that’s inside the fresh pineapple…

Hawaiian Sheet Pan Meal

A quick and easy sheet pan meal with ham, pineapple, potatoes and carrots.

Ingredients

  • 1 lb. smoked ham, sliced 1/2″ thick into 4-6 slices
  • 3 large white potatoes, thinly sliced
  • 3-4 carrots, peeled and sliced into chunks
  • 1/2 a large pineapple, cored and sliced into chunks
  • 2 TBS. olive oil
  • salt & pepper
  • 2 tsp. your favorite seasoning blend (lemon pepper, steakhouse seasoning, etc)

Directions

  1. Preheat oven to 350 degrees. Place sliced potatoes and carrots in a large bowl. Drizzle olive oil on top and sprinkle salt, pepper, and seasoning on top of that. Toss until well coated.
  2. Lay out potatoes and carrots on one side of a rimmed baking sheet. Lay ham slices on the other, putting pineapple between each slice.
  3. Bake for 35 minutes, flipping potatoes and carrots halfway through baking.

Step-By-Step Instructions

Preheat oven to 350 degrees. Place sliced potatoes and carrots in a large bowl. Drizzle olive oil on top and sprinkle salt, pepper, and seasoning on top of that. Toss until well coated.

Lay out potatoes and carrots on one side of a rimmed baking sheet. Lay ham slices on the other, putting pineapple between each slice.

Bake for 35 minutes, flipping potatoes and carrots halfway through baking.
