Buffalo Chicken Sliders with Blue Cheese Slaw

I’ve discovered these great carb-less bread items at my grocery store. They have burger buns, four different types of bread “loaves” and bagels all with low to no carbs. It’s a great addition to my kitchen when I’m sick of having to wrap something up in a lettuce leaf.

The bread is super dense and thick, but it works in a pinch. Do I miss regular bread? Yes, of course, but having this option on the table is wonderful.

So far, I’ve tried the regular “white” bread and the buns. Each bun and slice of bread is much smaller than a regular slice of bread (probably to get the carb count to zero). If you want a sandwich, it’s probably best to make two.

The first thing I tried with the buns were these sliders. I’ve had my eye on a jar of half-empty buffalo sauce in the back of my fridge for a while now. I wanted buffalo chicken, but I just hadn’t settled on what exactly I wanted to do with it.

Shredded chicken with buffalo sauce is easy. Just cook the chicken however you want (boil, poach, broil, grill, fry, pan-fry, bake) and then shred it with two forks and add the buffalo sauce. What really makes this recipe sing is the blue cheese slaw.

I chopped up a half head of cabbage and mixed it with some blue cheese crumbles, mayo, and vinegar. This slaw is divine. It’s so tangy and creamy and amazing. I could eat it by itself, it’s that good!

It’s even better when you put it on top of a sandwich.

It’s a classic combination, yet reinvented. It’s simple yet new and exciting. It’s everything I want in a good buffalo chicken sammie.

Buffalo Chicken Sliders with Blue Cheese Slaw

Ingredients

  • 1 lb. cooked chicken, shredded
  • 1 cup buffalo wing sauce, plus more for topping
  • 1/2 head cabbage, shredded
  • 3/4 cup mayonnaise
  • 2 TBS. white vinegar
  • 1 cup blue cheese crumbles
  • Buns or mini buns, for serving

Directions

  1. In a large bowl, mix together the chicken and wing sauce.
  2. In a separate bowl, stir together cabbage, mayo, vinegar, and blue cheese. Refrigerate until ready to serve.
  3. Toast buns and then top with a few spoonfuls of chicken and then blue cheese slaw. Top with extra buffalo sauce, if desired.
