Coconut Cilantro Lime Brown Rice

If there’s one countertop appliance I use more than any other in my house, it’s probably my rice cooker.

The air fryer comes in second, though.

We’ve gone through rice cookers over the years like underwear. They burn out pretty easily if you’re using them as much as we do. Rice is one of our go-to sides for just about any dinner or lunch.

Brown rice takes quite a bit longer to make in the rice cooker. It already takes longer to cook normally, so most of the time I’ll have to run it through a partial second cycle or let it sit in the hot steam afterward for 10 minutes. You really just have to figure out how your rice cooker handles it, because yours could be vastly different than mine. “Cooking times may differ” absolutely applies here.

This brown rice recipe is the most delicious way to make brown rice that I’ve ever encountered. The rice was so flavorful, a little bit crunchy and soft all at the same time. It’s like Chipotle’s cilantro lime rice but way, WAY better.

The key here is to use chicken broth instead of water. I grabbed a carton of chicken bone broth and it was even more flavorful. Once you add in the coconut milk, all bets are off. The rice comes out a slight bit creamy and absolutely dreamy.

Coconut Cilantro Lime Brown Rice

A creamy, flavorful brown rice recipe with coconut milk, cilantro and lime.

Ingredients

  • 1.5 cups brown rice
  • 2 cups chicken broth
  • 1 cup coconut milk
  • 2 TBS. butter
  • Pinch of salt
  • Juice of 1 lime
  • 1/4 cup chopped, fresh cilantro

Directions

  1. Place brown rice, chicken broth, coconut milk, butter and salt into a rice cooker. Cook until tender.
  2. Stir in lime juice, cilantro and extra salt and pepper and serve.
