BBQ Chicken with Peach Salsa

It’s still 10 million degrees here on the surface of the sun—er, I mean OKLAHOMA.

I wrote last week about how the grilling season was winding down, how pasta salad recipes will soon be replaced by crockpot meals, and how fall was right around the corner.

WRONG.

There’s nothing but 90 degree temperatures in store for Oklahoma for the next NINE DAYS. Nine days!! How is that even possible??

I know, I know. We usually don’t get “fall” until the end of October. But gosh darnit guys, it’s almost September! Can we get a break?

We fired up the grill this weekend because it’s just too darn hot to cook inside sometimes. Barbecue chicken is the one thing I’ve been craving in this insane summer heat.

I’ve made it a few times this summer with different recipes, but serving barbecue chicken with peach salsa was one of my favorite ideas.

The peach salsa is spicy, vibrant, and highly refreshing. Perfect for these miserably hot summer days that just seem to drag…

BBQ Chicken with Peach Salsa

  • Servings: 4

A simple barbecue recipe with a vibrant peach salsa.

Ingredients

  • 4 boneless, skinless chicken breast

  • 2 tsp. Cajun seasoning

  • 1/2 cup barbecue sauce

  • 3 peaches, pitted and diced

  • 1 red bell pepper, diced

  • 1 red onion, diced

  • 2 jalapenos, minced

  • 1/4 cup chopped cilantro

  • 2 TBS. lime juice
  • Directions

    1. Season chicken with Cajun seasoning. Heat grill over medium heat and grill chicken until cooked through, about 6-8 minutes per side. Remove from grill and brush with barbecue sauce.
    2. Make the peach salsa: in a large bowl or resealable contained, combine the peaches, bell pepper, onion, jalapenos, cilantro and lime juice. Mix well and refrigerate until ready to serve.
    3. Serve chicken with a spoonful of peach salsa on top.
