Pigs in a Blanket Breakfast Casserole

My family has several Christmas traditions, like eating snacks/appetizers on Christmas Eve, watching A Christmas Story on either Christmas Eve or Christmas Day, and making a breakfast casserole for Christmas morning.

We’ve used a few different breakfast casserole recipes over the years. My husband loves this biscuits and gravy one. I love this traditional bread, egg and sausage one.

I think this Pigs in a Blanket Breakfast Casserole might need to be put on the list as well.

It’s a pretty easy recipe to make, and you can easily make it the night before then just pop it into the oven to bake while you’re opening presents.

The original recipe called for lil’ smokie type weenies, which are typically used in Pigs in a Blanket recipes, but I wanted to use breakfast sausage links instead. I think this recipe turned out even better because of that!

Breakfast Casserole History

I know my family isn’t the only one who makes a breakfast casserole for Christmas morning. It’s turned into a real thing for people so they don’t have to worry about standing around in the kitchen making breakfast while the kids open and play with presents.

My family started making the breakfast casserole when I was in middle school, and we’ve done it every year since. I know some people who bake large batches of cinnamon rolls to heat up on Christmas morning, but I like my breakfasts savory. The breakfast casserole is perfect for that.

Not only are breakfast casseroles easy to make and throw together the day before (so you only have to bake in the morning), they can feed a crowd. If you have a lot of people staying at your home for the holidays, a breakfast casserole is a must for Christmas morning.

Choosing Your Ingredients

Crescent rolls are integral for this breakfast casserole recipe.

Most Pigs in a Blanket recipes use the pre-portioned dough because of how easy and tasty it is.

If you want to go the traditional Pigs in a Blanket route, you can use lil’ smokies. You just need to make sure to cut up the crescent roll dough in smaller portions (2-3 pieces) since the smokies are typically smaller than breakfast link sausage. Lil’ smokies are cooked, too, so you just need to skip the first step of this recipe.

If you use breakfast link sausage, I recommend this brand from Kroger. It’s the perfect size and it has a great taste.

Pigs in a Blanket Breakfast Casserole

A cheesy breakfast casserole made with crescent roll wrapped sausage links and eggs.

Ingredients

  • 2 packages crescent roll dough (8 crescent rolls per package)
  • 16 breakfast pork sausage links
  • 5 eggs
  • 1.5 cups milk
  • 1 tsp. dry mustard
  • Salt and pepper
  • 1 tsp. Cajun seasoning
  • 2 cups shredded cheddar cheese
  • Directions

    1. Heat a large skillet over medium high heat. Add sausages and cook until browned on all sides, about 5-10 minutes. Remove from heat and let cool slightly.
    2. Unroll crescent roll dough and separate into 16 portions. Place one sausage link on the wider side of a crescent roll. Wrap dough around sausage. Place wrapped sausage in a greased 13×9″ baking dish. Continue with remaining sausage and crescent roll dough pieces, making 16 pigs in a blanket.
    3. In a large bowl, whisk together eggs, milk, salt, pepper, dry mustard and Cajun seasoning.
    4. Top pigs in a blanket with shredded cheddar cheese. Pour egg mixture on top. Bake, uncovered, for 30-40 minutes, or until egg mixture is set and crescent rolls are browned.
