Cheddar Bay Biscuit Breakfast Casserole

I love a good breakfast casserole and this recipe is no exception.

I think it might make it into my Top 5 list of favorite breakfast casseroles.

There are two casseroles my family switches between on Christmas: biscuit and gravy casserole and another one that uses bread, a bunch of eggs, and sausage.

We will have to add this one to the rotation.

I don’t know why I didn’t think of it sooner. Cheddar Bay Biscuits are so good, and deserve to top a breakfast dish.

Make sure you watch the oven, though. All ovens bake differently, and I may have overcooked this the first time I made it.

Shredded cheese that you grate yourself will taste better and melt better than the bagged version. Feel free to add other ingredients, too. I think this recipe will work well with chopped ham, onion, and peppers.

Cheddar Bay Biscuit Breakfast Casserole

An extremely cheesy breakfast casserole with sausage, eggs, and Cheddar Bay Biscuits.

Ingredients

  • 1 lb. breakfast sausage
  • 10 eggs
  • 1/4 cup milk
  • Salt and pepper
  • 1 cup shredded cheese, plus more for biscuit mix
  • 1 tsp. Cajun seasoning
  • 1 box Cheddar Bay Biscuit mix, plus ingredients needed to make it
  • Directions

    1. Heat a large pan over medium high heat. Preheat oven to 425 degrees. Spray a 13×9″ baking dish with cooking spray.
    2. Brown sausage on stovetop in pan over medium high heat. Crumble with a spoon, cooking for 6-8 minutes or until browned and cooked through. Set aside.
    3. In a large bowl, whisk together 10 eggs, milk, salt and pepper. Set aside.
    4. Make biscuit mix according to package instructions.
    5. Add sausage to prepared baking dish. Pour egg mixture on top. Season with Cajun seasoning. Sprinkle cheddar cheese on top.
    6. Spoon biscuit mixture on top, making 6-8 Biscuits. Biscuit mixture doesn’t have to cover entire casserole, they will spread while baking.
    7. Bake, uncovered, for 15 minutes. Make the herb butter mix that comes with the biscuit mix according to package instructions. Spoon on top of biscuits. Return to oven, this time at 350 degrees, for 10 minutes or until golden brown.
