Peanut Butter Cheerio Bars

Rob and I have become Aldi nerds.

We’ve figured out we can get far more bang for our buck by shopping at Aldi. I’ve cut back our monthly grocery/food bill from around $400 a month to $200 a month while we finish up buying our house. Aldi plays a huge part in that.

There’s certain things I love about Aldi. I adore their “red bag” chicken. It tastes exactly like a Chick-Fil-A breast. I’m a big fan of Aldi’s cheese selection. I love Savoritz crackers. Aldi also has me hooked on some sauces (tikka sauce, represent!).

But the one thing that Aldi is good at saving you money on: cereal.

We don’t eat a lot of cereal, but we’ve had an over abundance of milk lately and needed something to use it up before it went bad. A big, GIANT box of honey nut Cheerios (or Crispy Oats, which is the Aldi version) cost less than $5 and will last a lifetime, I’m sure of it.

Instead of just using the cereal for, well, cereal…I decided to make some snacks with it as well. I vaguely remember a Cheerio-type candy bar from when I was a kid, but I can’t find it on the internet ANYWHERE. It’s one my mom used to love, and grocery stores would sell it at the registers near the other candy bars. Who knows, maybe I’m stuck in some kind of weird Mandela effect.

This bar tastes like what I remember—I think. It’s crunchy, sweet, and the perfect little snack. It’s also extremely easy to make—it takes less than five minutes to whip it all together and then all you have to do is wait for it to chill so you can cut it into bars.

Peanut Butter Cheerio Bars

  • Servings: 8-10

Crunchy snack bars filled with honey nut cheerios, peanut butter and honey.

Ingredients

  • 6 cups Honey Nut Cheerios
  • 1 1/2 cups peanut butter
  • 3/4 cup honey

Directions

  1. In a small saucepan, heat peanut butter with honey. Stir constantly until mixture resembles a sauce. Remove from heat.
  2. In a large bowl, combine Cheerios with peanut butter-honey mixture. Stir until well coated.
  3. Line a large baking sheet with parchment paper. Pour out Cheerio mixture onto sheet into a single layer. Refrigerate for 30 minutes.
  4. Cut into bars and serve. Keep leftovers refrigerated.
