This could be my last overnight oat recipe for a while.
For one thing, we’re getting burnt out on overnight oats.
Another reason: we’re running out of overnight oat flavors to try!
I’ve done apple pie, strawberry, blueberry and now pumpkin. What else is left?
This recipe was probably my favorite. Well, it’s a toss up between this and the apple pie recipe. I love fall flavors, and pumpkin is the essential fall flavor. This recipe exudes all those pumpkin spice flavors.
I had a half a bag of chocolate chips hanging out so I decided to throw those in for good measure. Everything turned out like a pumpkin spice dream. Chocolate and pumpkin, strangely enough, go really well together. The chocolate chips added a little burst of sweetness that helped balance out the earthy pumpkin.
My overnight oat recipe base is still the same: 1/2 cup oats, 3/4 cup vanilla almond milk or regular milk, 1/4 cup Greek yogurt. I’ve found you get a really thick and tasty oatmeal with that base.

Pumpkin Chocolate Chip Overnight Oats

Ingredients
- 2 cups oatmeal
- 3 cups vanilla almond milk or regular milk
- 1 cup Greek yogurt
- 1 can pumpkin puree
- 4 tsp. pumpkin pie spice
- 4 TBS. brown sugar
- 2 cups semi-sweet chocolate chips
Directions
- In resealable containers, mix together 1/2 cup oatmeal, 3/4 cup milk, 1/4 cup Greek yogurt and 1/4 can of pumpkin puree. Stir in 1 teaspoon pumpkin pie spice and 1 tablespoon brown sugar. Top with chocolate chips. Repeat for remaining 3 containers.
- Cover and refrigerate overnight. Serve warm or cold in the morning.
Here I kept thinking I needed to turn overnight oats into a smoothie, but now I see I can eat them straight out of the jar. Thanks! 😍🍃💜
