Lettuce wraps are difficult to eat at work.
I eat lunch at my desk (I know I shouldn’t) because I’m swamped most of the time. Since I eat at my desk instead of in our very nice break room, I typically only bring sandwiches or salads to work. Anything I don’t have to reheat works best for me.

I’ve experimented with taking lettuce wraps for my lunch and failed miserably. I end up with ingredients smeared across my desk and tucked into the cracks on my keyboard. It’s messy.
Lettuce wraps are similar to tacos in how messy they are to eat. I also would not recommend eating tacos at your desk, especially if they’re crunchy tacos.

Despite that, I still really enjoy taking lettuce wraps with me to work. They’re a great lunch in regard to nutrition. Anytime I can I swap out bread for lettuce I do.
These wraps are extremely easy to make, especially if you have pre-cooked chicken. I used those chicken skewers from Costco for this recipe and it turned out great.

Chipotle Chicken Lettuce Wraps

A simple yet flavorful chicken lettuce wrap with chipotle chicken, avocado, tomato, and a cilantro-lime yogurt sauce.
Ingredients
Directions
- In a large bowl, toss cooked chicken with oil, chili powder and smoky paprika. Warm in a skillet or air fryer for a few minutes until warmed through. Set aside.
- Make the cilantro-lime yogurt sauce: add cilantro, yogurt, cumin, and lime juice to a food processor or blender. Blend until smooth.
- Make the lettuce wraps: use butter lettuce leaves and top with a spoonful of chicken, some diced tomatoes, diced avocados, and a spoonful of the cilantro lime sauce.
