Sausage McMuffin Casserole

What’s your go-to fast food breakfast?

If I’m at a chain, I try to find a breakfast burrito on the menu. They’re my absolute favorite. If I’m going through the drive-thru, it’s usually because I’m in a hurry and need to eat while driving. Breakfast burritos are easy to handle while on the road.

If I go to McDonald’s, though, I like to get their McGriddles.

When I was younger, my parents and I would go on long road trips in the summer. We would usually kick off the drive with a McDonald’s breakfast. I always got the bacon, egg and cheese McGriddle, and my parents would always get their regular McMuffin meal with coffee.

I wanted to make a casserole out of a classic McMuffin because I was feeling nostalgic. I’ve never been a big fan of McMuffin’s, but a deconstructed one sounded like it would hit the spot.

I swapped the ham for crumbled sausage and it really made this casserole shine. I even used some spicy meatless sausage that tasted more like Italian sausage than breakfast sausage, and it was still REALLY good.

You really need to give this recipe a shot, even if you don’t like McMuffins (like me). It’s sure to win you over!

Sausage McMuffin Casserole

Bite into a deconstructed sausage McMuffin with this hearty casserole packed full of sausage, eggs, cheese and English muffins.

Ingredients

  • 6 English muffins, cut into sixths
  • 1 lb. breakfast sausage
  • 1.5 cups shredded cheddar cheese
  • 5 eggs
  • 1 1/4 cup milk
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. Cajun seasoning
  • Directions

    1. Heat a skillet over medium-high heat. Add sausage and cook, breaking up into crumbles, until browned, about 5-7 minutes. Drain off any excess grease.
    2. Preheat oven to 325 degrees. Grease a 13×9″ baking dish with cooking spray.
    3. Add chopped up English muffins to the bottom of the prepared dish, trying to cover the bottom completely.
    4. In a medium bowl, whisk together eggs, milk, salt, pepper and Cajun seasoning.
    5. Sprinkle half of the cheese on top of muffins. Add sausage on top of cheese. Pour egg mixture on top. Sprinkle the remaining cheese on top of that.
    6. Bake, uncovered, for 40-50 minutes. If top starts browning before it’s fully cooked, add foil and continue cooking.
