Sausage & Apple Hash

The fall and winter vibes are hitting hard in my house.

I feel like I’m constantly chopping apples, sipping pumpkin spice coffee, or washing my hands with peppermint-scented soap. I love this time of year. It’s both Christmasy and Fall-y and beautiful and cool. I wish every month of the year could be like this.

My meals have really embraced what’s in season right now, too. I’ve been cooking with apples, Brussels sprouts, winter squash and more. The fall harvest really rivals spring produce like asparagus, peas, and herbs. I’ll take a bushel of apples any chance I can get. Stinking up the break room at work with Brussels sprout? No problemo.

This dish really encompasses a lot of what I’ve been into the last few weeks. I love chicken-apple sausage and using it with more apples & veggies means you get a really delicious dinner.

I was really looking forward to eating this on my dinner break last night. We had pizza delivered to work and although I snuck a slice (or two), I had to get my hands on this skillet dinner. I’m so glad I did—it’s delicious. You’ve got all the fall flavors and whimsical textures in one skillet.

Sausage & Apple Hash

A very fall-like skillet dinner with chicken sausage, Brussels sprouts, apples & walnuts.

Ingredients

  • 4 chicken and apple sausage links, sliced
  • 1/2 lb. Brussels sprouts, ends trimmed and cut in half
  • 1 yellow onion, diced
  • 2 TBS. olive oil
  • 1 Granny Smith apple, diced
  • 1/2 walnuts, chopped
  • 1 tsp. caraway seeds
  • 1 tsp. thyme
  • salt & pepper
  • 3 TBS. apple cider vinegar
  • 2 TBS. stone ground mustard

Directions

  1. Heat one tablespoon oil in large skillet/cast-iron skillet. Add onion and saute until browned and tender, about 3-4 minutes. Add remaining oil and sliced sausage and saute until browned on both sides, another 4-5 minutes.
  2. Add apples, Brussels sprouts, caraway and thyme and stir. Let cook for 3-4 minutes before adding apple cider vinegar and mustard. Stir and cook for another 4-5 minutes or until Brussels sprouts are tender.
  3. Stir in walnuts and serve.

Step-By-Step Instructions
