Breakfast hasn’t really been on my radar lately. I’ve been just drinking bulletproof coffee and fasting until well after my lunch.
When I do get down with the first meal of the day, I experiment. Egg cups, omelettes, and other weird low-carb breakfasts. I’m too scared to eat things like breakfast sandwiches made out of meat (what? you haven’t seen those?), but these ham rollups were calling out my name.
It’s actually pretty difficult finding a deli ham that DOES NOT have sugar in it. After at least 10 minutes of searching at my local grocer, I finally found one with no sugar, and of the black forest variety. Do I know what that means? No. Does anybody know what black forest means??
I learned my scrambled egg style from Gordon Ramsay a few months ago and haven’t looked back since. The key to a good scrambled egg is transferring it on and off of the heat while cooking. I go 60 seconds on heat, 60 seconds off—all while stirring at the same time. You get the fluffiest, tastiest scrambled eggs this way!
I liked the addition of cheese in these egg rollups when I normally loathe cheese with scrambled eggs. I think it helped that there were other ingredients inside (cherry tomatoes & spinach). You can essentially put whatever you want inside: roasted red peppers, mushrooms, bacon—have fun with it. I might add bacon the next time I make these…because there will definitely be a next time.
Ham and Cheese Rollups

A low carb breakfast rolled up into ham with scrambled eggs, cheese, cherry tomatoes and spinach.
Ingredients
- 10 eggs
- 16-20 slices of ham
- 2 TBS. heavy cream
- 2 tsp. garlic powder
- salt & pepper
- Cooking spray
- 1 1/2 cup shredded cheddar cheese
- 1 cup baby spinach
- 1 cup cherry tomatoes, sliced in half
Directions
- Preheat broiler. Meanwhile, in a large bowl, whisk together eggs, cream, salt, pepper, and garlic powder until mixed well.
- Spray a non-stick skillet with cooking spray and heat over medium heat. Add eggs and cook, stirring constantly, for 1 minute. Remove from heat for a minute while still stirring constantly. Repeat multiple times until eggs reach consistency you prefer.
- Add cheese to eggs in skillet along with spinach and tomatoes. Let cool.
- When eggs are cool, spoon some in the center of a slice of ham and roll up. Lay ham seam-side down in a large baking sheet.
- Broil for 4-5 minutes or until ham is crispy.
