Quick & Easy Catfish Wraps

One of my favorite things to get at the grocery store is catfish nuggets.

It’s simply chopped up catfish filets, but it’s half the cost of an actual filet. My mom always uses catfish nuggets to make fried catfish, and now I can see why. I bought nearly 3.5 pounds of catfish for less than $5. That’s a deal if I’ve ever seen one!

I was craving fried catfish the other day so I bought the large tray of nuggets and went to work. Fried catfish is typically dredged in a cornmeal mixture, but I’m not one to stick with what’s typical. I dredged my catfish nuggets in pancake mix instead; it give the fish a slight sweetness that goes really well with the cole slaw in the wrap.

The theme of this recipe is ease. Fried catfish can be quite the undertaking, but if you work quickly and in batches it can be relatively easy. The rest of the wrap is simple: flour tortillas and pre-packaged coleslaw mix (with the pre-packaged dressing). You can have these wraps as a snack or dinner in about 20 minutes.

Pro-tip: use a resealable bag to coat the catfish in pancake mix. Just like shake and bake—add the mix, catfish, Cajun seasoning and then seal it up and shake to perfection. No clean up required (unless you accidentally don’t seal the bag all the way—then you’ll have a mess on your hands).

Battered and fried catfish wraps with cool and creamy coleslaw.

  • 1 lb. catfish nuggets
  • 1 (14 oz.) package cole slaw mix (with the dressing)
  • 1 tsp. Cajun seasoning
  • salt & pepper
  • 1/2 cup pancake mix
  • 1/4 cup vegetable oil
  • Flour tortillas, for serving

Directions

  1. In a large resealable bag, pour in pancake mix, Cajun seasoning, salt and pepper. Add catfish, seal, and shake until well coated.
  2. In a large, deep skillet, heat oil over medium-high heat. Add battered catfish and fry until golden and flaky, about 5-6 minutes. Transfer cooked fish to a paper-towel lined plate.
  3. In a bowl, mix the coleslaw mix with dressing. Make the wraps: place a few spoonfuls of coleslaw on a flour tortilla and add 2-3 catfish nuggets. Serve.
