Low Carb Sausage Pizza Bites

It’s a pretty busy next few weeks around the Welcher household. We’re in the thick of football season, and our station has OU games on our air this weekend (OU-Texas, to boot) and next weekend. I’ll be working with very few days off over the next few weeks, but it will be worth it in the end. It’s always fun to do football shows before and after the big games!

Because of the whirlwind of work, I’m going to have to adjust my normal routine. I usually grocery shop on Saturdays and cook on Sundays, but that will probably have to be shifted this week and next.

I don’t know about you, but I’m a sucker for a good routine. I do the same things almost everyday, with the same personalized deadlines, and if there’s a wrench in that program—whew, you better watch out.

It’ll take some adjusting, but I’m hoping to still have plenty of recipes for you guys over the next few weeks. Heck, before you know it, it will be Halloween—and then Christmas decorating time. I decorate my house the day after Halloween, to get in the holiday spirit…

To power my life force over the next few days, I’m chowing down on these tasty pizza bites. They’re low carb (no flour) and extra cheesy, and packed full of mild Italian sausage. I’ve become slightly obsessed with these little guys.

If you don’t like the flavor of coconut use almond flour. However, the coconut flour really didn’t taste like coconut much after baking. I think there’s a lot of flavors going on here that it really masks that tropical taste you sometimes get with coconut flour. Heck, if you open a bag of the stuff, you can smell it—it’s powerful.

Make sure to grab a jar of pizza sauce to dip these pizza bites into. This recipe is great for an on-the-go snack, breakfast, lunch…you name it.

Low Carb Sausage Pizza Bites

  • Servings: 6-8

Cheesy Italian sausage pizza bites that are low in carb and high in fat.

Ingredients

  • 1 lb. ground mild Italian sausage, cooked and drained
  • 4 oz. cream cheese, softened
  • 1 tsp. garlic powder
  • 1 tsp. Italian seasoning
  • 1 cup mozzarella cheese, shredded
  • 1/3 cup coconut flour
  • 3 eggs, beaten
  • 1/2 tsp. baking powder
  • Pizza sauce, for serving

Directions

  1. Preheat oven to 350 degrees. In a large bowl, stir together all ingredients until smooth and well combined. Refrigerate mixture (covered) for 10-20 minutes until chilled.
  2. Using an ice cream scoop or large spoon, scoop out spoonfuls of sausage mixture and drop onto a greased baking sheet. Bake for 20-22 minutes until golden brown and crispy.
  3. Serve with pizza sauce.

Step-By-Step Instructions

Preheat oven to 350 degrees. In a large bowl, stir together all ingredients until smooth and well combined.

Refrigerate mixture (covered) for 10-20 minutes until chilled.
