Papa Verde Stuffed Sweet Potatoes

I’m all about comfort foods right now. Potatoes, pasta, cookies, you name it. This whole “end of the world” thing has got me feeling a certain type of way.

I know we should all be about eating healthy right now since most of us are homebound, but it’s really hard given the circumstances. I’m having to make sure I’m eating enough fruit and veggies so I can keep my immune system up, and Rob and I are taking daily walks around our neighborhood to make sure we’re getting enough fresh air and exercise.

I’m hoping this self-isolation doesn’t last much longer, but it probably will. June, maybe? Later?

I’m also recreating my favorite restaurant foods in the kitchen. If I can’t eat at my favorite restaurant, why not make what I want at home?

Jason’s Deli has this delicious stuffed sweet potato that I adore. The “Papa Verde” is a massive sweet potato stuffed with spinach, deli turkey, cheese and avocado with a spicy ranch dressing on top. I rarely eat at Jason’s Deli, but when I do, I always order the Papa Verde.

It’s definitely helpful that this recipe is super easy to make at home. If you’re trying to recreate your favorite restaurant recipes at home, it helps to pick simple ones.

I think I recreated this recipe down to a T. It’s got melty, crispy Asiago cheese on top. A homemade spicy ranch dressing. A perfectly roasted, tender sweet potato.

This recipe, although not exactly healthy, does give a healthy dose of nutrients with the spinach and sweet potato. It’s a comfort food yet a food that also fills a void from staying inside for weeks.

Papa Verde Stuffed Sweet Potatoes

  • Servings: 3-4

Roasted sweet potatoes stuffed with spinach, turkey, cheese and avocado with a spicy ranch dressing.

Ingredients

  • 3-4 medium sweet potatoes
  • 3-4 TBS. butter
  • 1/2 lb. sliced deli turkey
  • 1 cup Asiago cheese, shredded
  • 1 cup baby spinach
  • 2 avocados, sliced

For the spicy ranch dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1 TBS. white vinegar
  • 1 jalapeno, diced
  • 1 tsp. garlic powder
  • 1 TBS. fresh dill, minced
  • 1 TBS. fresh parsley, minced
  • salt & pepper
  • 1 TBS. dried chives

Directions

  1. Preheat oven to 425. Scrub sweet potatoes and pierce all over with a fork. Lay potatoes on a foil-lined baking sheet. Bake for 45-50 minutes or until tender. Split open with a knife and place 1 tablespoon of butter on each potato. Sprinkle salt and pepper on top.
  2. Add spinach, turkey, and Asiago cheese on top of buttered sweet potatoes. Switch oven over to broil.
  3. Broil potatoes until cheese is browned and bubbly, 2-3 minutes.
  4. Make the spicy ranch dressing: whisk together all dressing ingredients and refrigerate until ready to serve.
  5. Top potatoes with avocado slices and ranch dressing and serve.

Step-By-Step Instructions

  1. Idk if there’s a typo in the recipe, or if it’s just how you intended the sauce to be… but this was definitely not ranch by any definition. It was FAR too watery, and unpleasantly heavy with vinegar and olive oil flavours.

    Your recipe is perfectly good, otherwise…

    1. I like my ranch liquidy, but it shouldn’t have been too vinegary! Since making this, I’ve switched to making ranch with Greek yogurt instead of the olive oil-Mayo method. I use Greek yogurt & thin it out with water or lemon juice to the consistency I desire (then add herbs noted here OR a ranch dressing packet). You should try that next time.
