Honey-Basil Fruit Salad

Basil is an odd herb.

Sometimes I really enjoy its flavor. Other times I’m turned off by the “skunkiness” of it.

I enjoy it chopped fresh on top of tomatoes and mozzarella. I don’t like it stirred in with my spaghetti sauce (what??). I’m what you might call a basil-loving enigma.

Fresh chopped basil in fruit salad is something to try at least once in your life. I love fresh herbs like mint in my fruit salads–they add a brightness to the salad that makes it taste wonderful in the summertime. Basil can work the same way– adding an extra layer of flavor to fruit salads to make them taste fresher.

The key to a good fruit salad with herbs is to pack it full of sweet fruits. Pomegranate seeds are great for this. They pack a juicy, vibrant and ultra-sweet punch to help balance the herby basil.

I also love throwing berries into my fruit salads: blueberries, strawberries, raspberries, blackberries…all of them are good in my book.

Honey-Basil Fruit Salad

  • Servings: 6-8

A vibrant fruit salad with a mix of berries and pomegranate with a honey-basil-mint syrup.

Ingredients

  • 1 cup blackberries
  • 1 cup chopped strawberries
  • 1 cup blueberries
  • 1 cup pomegranate seeds
  • 4 large basil leaves, chopped
  • 1/4 cup chopped fresh mint
  • Juice of 1 lime
  • 1-2 TBS. honey
  • Directions

    1. Add blackberries, strawberries, blueberries and pomegranate seeds to a large bowl. Stir until well combined.
    2. In a small bowl, whisk together lime juice, mint, basil and honey. Pour over berry mixture. Toss until well combined. Serve topped with more fresh chopped basil and mint.

    Try your hand at this delightful basil & berry fruit salad. You might just end up addicted to mixing in that odd herb basil.

    2. Now I’m reminded of that fruit-infused water recipe I saw years ago! It made use of blackberries and sage — and it crossed my mind again after seeing your salad. Berries and herbs definitely pair well!
