Sweet and Sour Wonton Bowls

Gyms around the New Year are crazy busy.

They’re bustling hubs of people looking for a fresh start, people kick-starting their New Year’s resolutions, and the people who have already been there all year long.

You know who you shouldn’t find at a gym? Me.

I’m the person who legitimately does not know what they are doing around machinery. I can figure out a treadmill no problem, but any other exercise or weight-lifting machine is an enigma to me. I’m like a lost seal pup in a sea of killer whales.

But you know what’s just as bad as not knowing how to use machinery? Pretending to know what you’re doing. Should I ask for help? Yes. Do I ask for help? I wouldn’t dare.

So, when I went to the gym this weekend, I picked up a kettle bell and swung it above my head ten times like I knew what I was doing.

That was a horrible decision. Within 30 minutes, I was doubled over in pain and could barely walk. Within 24 hours, walking 10 steps from my bed to the bathroom was like running a mile. I could barely make it.

I’ve learned my lesson about gyms now. I’ll stick to what I know and ask questions when I need to. I’ll also continue to meal-prep for the week and stick to a healthier diet. That’s really where I succeed in this “New Year, New Me” lifestyle. I know how to cook and I don’t have to ask questions.

This bowl will be going with me to work for the rest of the week. It’s protein-packed, jammed full of veggies and is a really filling meal.

This meal is only around 400 calories. The most calorific thing is the mini wontons, which if you get the Bibigo brand is only 130 calories for 8.

Sweet and Sour Wonton Bowls

A low-calorie meal made with frozen wontons, savory rice, sweet and sour sauce and broccoli.

Ingredients

  • 32 frozen mini wontons, like Bibigo’s chicken & cilantro
  • 1.5 cups brown rice
  • 3 cups water
  • 1 chicken buillon cube
  • 1 cup frozen peas & carrots
  • 2 (11 oz) bags frozen broccoli florets
  • 3 TBS. sweet and sour sauce
  • 1 tsp. ground ginger
  • 1 tsp. garlic powder
  • Directions

    1. Air fry mini wontons at 375 degrees for 9-10 minutes. Let cool and then toss in a large bowl with sweet and sour sauce.
    2. Meanwhile, place rice in a slow cooker with chicken buillon cube, frozen peas and carrots, water, ginger and garlic. Cook until rice is tender.
    3. Microwave broccoli according to package instructions. Season with salt, pepper and garlic powder.
    4. Make your bowls: portion out broccoli and corn and top with 8 mini wontons on each bowl.
